They're basic stainless steal pots and pans for cooking. If they have a lid, is it safe and healthy to put a lid on the food and refrigerate it or should I put it into Tupperware of some sort?

I'm a cheif not a spelling Bee Champ but here you go.Yes its fine just be sure to cover the pan with a lid or foil...and depending on what it is you shouldn't keep it too long. You can almost always tell when something has gone bad by its smell or look. If it is Tomato based and has black around the edges do not eat you will get food poisoning...Tomato based foods are easiest to tell... also with meats if it becomes oily and smells faintly rotted pitch it...you dont have too many issues with pastas because they will dry out if uncovered or become mushy if covered and won't be apetizing....vegtables and fruites will blacken and rot...dairy based wil curd or mold... and if you remeber anything its this... IF YOURE NOT SURE PITCH IT!!!!!

I have done both,...I put my left overs in bowls if possible but if it is a big pot of chilli or something like speghetti I tend to leave it in the pan..Just make sure to have a lid that fits on the pan good.

I think so, just be sure the pan isn't a used Bedpan. (They tend to make the food taste Crappy.)
