There are nerves that go right over the top of your mouth, so when they get cold, they act up and hurt. It lasts longer the longer you have something cold against the roof of your mouth.

Just warm the roof of your mouth w/ tongue. It works!
I have not had one since I learned that.
Also, don't aim the straw towards roof of mouth, if drinking.
when cold overstimulates the nerves and blood vessels at the back of the roof of the mouth. But scientists continue to explore exactly how the cold stimulus causes the pain. Is brain freeze an example of referred pain? That's when the brain receives a message of pain from one part of the body, but misreads the return address, perceiving it as coming from the somewhere else.

When cold stuff (like popsicles, ice cream or slushies) touches the roof of your mouth it can set off a nerve reaction (in the spheno-palantine ganglion, to be precise), that causes the blood vessels in your brain to swell. When the blood vessels swell, you get a headache. The headache usually lasts less than a minute.

on the roof of your mouth there are nerve endings , when they get too cold it hurts but there is a good way to get rid of the brain freeze faster, when you feel it start happening , press your tongue to the roof of your mouth firmly, and it will go away a lot faster
