One species that only appears in a single episode and is specifically referred to as xenophobic is the Prytt from the Next Generation episode "Attached".

Several of them are. The Romulans, especially in the original series, are the most obvious. The Founders of DS9 are also definite xenophobes; they really despise other sentient forms. There are some others who only appear in single episodes; I don't remember the names immediately.
