Leave about 1/2 inch from the top open. You can eyeball it, there isnt any specific measurement, just give it some room to rise. Depending on the type of muffin and ingredients, when they rise they could tip over or they could souffle, fall into the center. If you have a round ice cream scooper, like a 40 quart or 80 quart those are the easiest to work with and all your muffins will come out exactly the same.
