can you dry egg whites, if so how? I have this recipe that calls for dried egg whites.

NO! Commercially dried eggs are done under sanitary conditions, with machinery specifically designed to speed dry to prevent the growth of bacteria. Home drying of eggs if not recommended because of the huge risk of growing salmonella bacteria in the eggs. Its not killed off by drying, and could make you very sick.
Please do not attempt to home dry eggs!

I doubt it... I'd just buy them.

I'm pretty sure you can use normal wet egg whites though. I buy them in a carton near the other eggs, and use them with everything.
