Funny you should ask, lol. I bumped into a recipe for hot dog kebobs - hot dogs cut in 1" slices, alternating on skewers with red/green peppers, pineapple. Will see if I can find the link again.

Prep time: 15 minutes

Ingredients:

* 1 apple
* 1 banana
* 1/3 c. red seedless grapes
* 1/3 c. green seedless grapes
* 2/3 cup pineapple chunks
* 1 cup nonfat yogurt
* 1/4 c. dried coconut, shredded

Utensils:

* knife (You'll need help from your adult assistant.)
* 2 wooden skewer sticks
* large plate

Directions:

1. Prepare the fruit by washing the grapes, washing the apples and cutting them into small squares, peeling the bananas and cutting them into chunks, and cutting the pineapple into chunks, if it's fresh. Put the fruit onto a large plate.
2. Spread coconut onto another large plate.
3. Slide pieces of fruit onto the skewer and design your own kabob by putting as much or as little of whatever fruit you want! Do this until the stick is almost covered from end to end.
4. Hold your kabob at the ends and roll it in the yogurt, so the fruit gets covered. Then roll it in the coconut.
5. Repeat these steps with another skewer.

Suggestion:

Roll your kabobs in something besides coconut. Try granola, nuts, or raisins, or use your imagination.

Kangaroo Kabobs

Ingredients

Bright-colored, sturdy plastic straws to use as individual kabob skewers
Any type of fruit, precut in hunks (oranges, watermelon, strawberries, bananas)
Rainbow marshmallows, large size
Pretzels (loops, not sticks)

Put a large rainbow-colored marshmallow at one end of your straw skewer to keep the goodies from sliding off one end while you load up the other end. Add the fruit and pretzels, mixing up the order for a more interesting kabob. Put the other large marshmallow on the end of the kabob and nibble on the goodies in between! When you're all done, gobble up the marshmallow stoppers.

Now you have some energy to try a few kangaroo jumps yourself. Can you land with both feet at the same time? How much distance can you cover? Have all your guests join in a kangaroo jumping contest. If their feet don't land at the same time, their jump doesn't count.

You could do a plain fruit shish kabob, with a yogurt based dipping sauce if you like. Fruits like bananas, apples, grapes and melon really hold up to being stuck; just make sure you toss the apples and bananas with a little lemon or lime juice to stop them from browning. (Even orange juice works!)

If you're looking for a entree shish kabob, marinated chicken or steak plus veggies like mushrooms and broccoli are good. Kids like to dip things, so you can mask any veggie flavor they like with a healthy dipping sauce. Yogurt and soy sauce are one of a vareity of choices (but not too much soy sauce, it's full of sodium usually).

try something different from texas. use rattlesnake and armadillo meat with succulant cactus chucks and a roasted assortment of peppers. first marinade it all in sweet and sour or ducksauce over night and when you put it on the grill be sure you stick the head (remove fangs of course) on frontend of spear and that will get everybody's attention, the snake or the armadillo. serve it with some good wick fowler armadillo and garlic chili. oh, and don't forget the ice cold longneck lonestar beer. not for everybody but my big family and neighbors just love it. yeh, and willie loves it!
