Because good and evil are actually the same thing. They are the polar extremes of a single concept. They cannot exist without each other.
Notice in life that everything has an opposite. Male/female. Hot/cold. Up/down. Love/hate. They're really all degrees of the same thing.
And this is the problem when people try to insist that god is good, when the truth is that god is neither good nor evil.

We have company (other humans)...
We all have a mind, that dissects, everything, compares everything, logically analyses everything..
All these are sufficient to compare and call something good , something bad.
But,
if you are alone on an island, right from childhood, even to know that you are a human being, you need another 'sample'
No scope for comparison about good or bad. You will keep doing what best you can in any given situation, and keep improving each time with experience, driven by survival instincts (and all the time, retaining the child-like innocence intact, though blissfully ignorant of it, its beauty, its importance ) .
In this crowded world too,
we can still be innocent like a child, but in full awareness , consciously too, and enjoy life... but we have to get out of the mind-game... it may take some effort (that's why spirituality is sought after !).

I think it's all relative. If there was nothing evil, how would we know good when we saw it? If there was no evil, there would be no problems, but there would be no conflict and no personal growth. Life would be ridiculously simple and pointless if we didn't have obstacles to overcome. And what about stories? What would we have if there were no villains anymore? There would be no stories worth telling, because there's no evil to be overcome.

---MORALITY IS A PERCEPTION---
To understand what you are asking we must first accept that we (everyone) make decisions on whether or not an act is good or evil by basing it on what we "perceive" as good and evil;...
...on what we see as giving us 'pleasure' and/or allowing us to avoid 'displeasure'.
However, mankind has developed 'expectations' from those within a family, clan, tribe, etc..
These expectations help insure the group's survival by maintaining its strength in numbers;...
... a typical "herd" mentality.
Over time, these expectations became more defined as groups merged with one another and, today, we recognize these expectations by such labels as "tradition", - "custom",...
... and "LAW".
It is not a coincidence that 'common' laws stem from holy writs, such as The Bible and the Koran,...
... for it is within these writs that some of the first written "moral expectations" are found).
So you see,...
... it is the implementation of LAWS (reward and punishment) which have had a 'conditioning' effect on man,
--- allowing most of us the choice to avoid the possibility of displeasure (punishment) by overriding those pleasure-seeking drives which have been deemed illegal (read "illegal" as "evil") by those societies we find ourselves having to associate with.
In his book HUMAN, ALL TOO HUMAN, Nietzsche writes:
"... No cruel man is SO cruel as he whom he has misused believes; the idea of pain is not the same thing as the suffering of it. The same applies to the unjust judge, to the journalist who misleads public opinion with petty untruths. Cause and effect are in all these cases surrounded by quite different groups of thoughts and sensations; while one involuntarily presupposes that doer and sufferer think and feel the same and, in accordance with this presupposition, assesses the guilt of the one by the pain of the other."
I wholeheartedly agree with this...

In the world of duality (our 'real' world) good and evil are two sides of the same coin. How we see it depends on us. Up cannot exist without down, here cannot exist wuthout there, now cannot exist without then. You cannot think of anything without associating its polaric opposite. It is the nature of this dualistic universe. The non-dual universe is God.

We must experience it to appreciate it.
How will you appreciate good if you don't experience evil?
