Yes, it would be very nice to bring a gift for the baby. She knows that you are a student, so spend only what you feel fits your budget - there are so many cute photo frames, you could choose one that would be appropriate for a baby photo -
a decorative piggy bank with some new shiny silver dollars in it (get from the bank) -
a hand and footprint kit from a toy store or craft shop
A pink, blue or yellow decorative basket filled with practical goodies like teething ring, rattle, stuffed animals, bibs, etc.
The standard baby blankets and clothes are always welcome, likewise for a gift card to Baby Gap, or Toys R Us.

Go online to Babies'r'Us and see if she's registered. Be guided by that. If not, buy the baby something for NEXT season (winter if she was born in summer, etc.) Never buy by the size on the tag. Babies grow much faster than you realize; some never even wear newborn size. Buy something the baby will grow into and the mother will think of you when she puts it on her baby in the future for the first time.
Buy books she can read to the child; that's so important. One thing I've always had good luck with is a toy called "Glowworm." Mothers have told me how much their babies love this and it's only ten bucks. You can see it on the website or on Amazon. Remember, if you buy clothes, always buy big!!!! Have fun!

Buy a gift for the baby if you like. Or if you know something that would make your former teacher feel good, give that. It could be a food item.

If you are tight moneywise, don't buy anything. After all you are the student. Students are not rich. Since she invited you to "meet" the baby, then go meet the baby. No gifts required.

Get a little baby gift. Since you seem to like to promote eco-friendly habits, try buying a really cute baby hat made from organic cotton. You can find cute little hats online or even at your local farmer's market. When I was little, I had one that looked like a strawberry.

Well, if she invited you over... some simple baby out fits.. here a lot of things are on sale so get a size bigger so the baby will grow in to it or get a nice picture frame the collage type.... Something that is in your price budget...

Diapers. They could always use diapers.
What you could do is find out her baby's weight before you head over, then buy a package of diapers for her.
