Depends on what you like and how much time you have. If you like relaxing and just chilling out. Townsville in North Queensland. If you like wine, maybe the barossa Valley or Hunter Valley. If you like Theme Parks, Gold Coast (Queensland). If you like animals, a zoo or animal park.
What about hiring a Campervan and travel the coast from Sydney to Cairns and then fly out of Cairns back home or the other way around.
The options are endless, but like i said it all depends on money, time and what u want to do.

A drive through bottle-o to get alcohol. I heard you dont have them. btw im australian. If you're staying in the east then make a day at a public beach.
But besides the opera house and harbour bridge theres not much in terms of man made.

Try coming to Adelaide, South Australia. here, we are known for our vineyards. Our wine is world-known. Also, here in SA, there is Kangaroo Island. here you can see koalas and other native animals as well as nature.
