OU = over/under one barrel on top of the other.
s/b = single barrel shotgun
d/b = double barrel shotgun (side by side.)

o/u signifies a double-barrelled shotgun with the barrel configuration being one on top of the other (hence the o/u). S/B also signifies a double-barrelled shotgun with the barrels being side-by-side
