Boy that's a tough one.
The most useful to me is Provolone or Colby Cheddar.
For eating by itself say on bread---that would be different for every oersobn, perhaps. Perhaps a good Jarlsberg Swiss would be my personal favorite.

~~~ mozzerella cheese sticks ! Put one in the microwave for about 10 seconds,,,it warms it just enough to make it a bit on the strechy side,,,warm and a little gooey,,,,,yummy !

Have you heard of "white cheese"? It's a delicacy here in our country (Philippines).. it's from goat's milk, and are curdled the natural way.. very delicious and very healthy.. yumm..
I also happen to love pizza, so mozzarella comes next in my list =)
blue cheese is kinda stinky, but i love the taste too! Great with wheat bread.. I guess I like cheeses that are, let's say, very unique and different =) cheddar is so common, hehe..

A three Cream Cheese from France. I got it at a Place called the FRESH MARKET and they sell really healthy food and most of it is organic...If you have that store around definetly try that cheese...its amazing
