God created man 'good' but mutable. There is no problem or contradiction regarding this truth.

One is "free" only within the limits of one's nature. As a human nature is finite and contingent, our experience of freedom is not absolute. Absolute freedom is one of the ideological conceits of modernity. It does not really exist.

God's perfection would in no way impinge upon human freedom, perhaps your query is concerned with God's omnipotence or omniscience?

choice is also freedom and what kind of God would He be if He just created puppets. He created us in love, and when you love something you set it free and if it comes back to you it loves you.
