For years I'm always asked to bring my hashbrown dish - at work, at family gatherings, etc - so I know it's good. & it's easy.
2 pound bag of frozen hashbrowns (chunky, not shredded)
2 cups shredded chedder
16 ounce sour cream
small can of cream of celery soup
1 stick butter
small onion, chopped
teaspoon or so of salt
teaspoon or so of pepper
Easiest to leave butter out so it's soft. Put a little cheese aside, then mix everything. Mix in everything, sprinkle remaining cheese on top, at 350 bake for 45 minutes covered, then 15 minutes uncovered. Serve hot (or reheat in microwave)

I always bring loaded mashed potatoes. You make them the same way you make regular mashed potatoes, and when they're done mash them up and then add:
Butter
Sour cream
Pepper
Salt
Real bacon bits
Cheddar Cheese
Don't add milk because the taters get runny and less fluffy. I didn't put amounts on the ingredients because the best way to make them is to add a little of the ingredients at a time and then taste them to decide what they "need". Just don't use your finger if other people are going to be eating them. I wouldn't make potato salad if you are using a recipe with eggs because if the stuff is sitting out for a while people will get sick. A girl my husband worked with brought potato salad to a potluck they were having and everyone that ate it came down with food poisoning...
Also the best thing to bring is a quick dessert: Cookies made from a roll of Pillsbury cookie dough or muffins that you just add water to the mix, stir, and bake. These things are easy and really tasty and no one will know the difference!

A chocolate mint cake. Recipe is very simple...
If you like to bake from scratch, make a chocolate cake. If not, just buy the cake mix at the store, it doesn't matter. Bake in cicular baking tins (very important).
While cake is baking, make a vanilla frosting. I would HIGHLY recommend spending the time to make the frosting from scratch. It's very easy to do and you can find a recipe online or on the back of a confectioners sugar box.
The two key pieces to this cake are the frosting and the topping. When the vanilla frosting is done add some mint extract. A little goes a long way and it should be done to taste. Just add a teaspoon at a time until it is to your liking.
Slice chocolate cake so that you have layers... the more layers, the more elegant this cake will look. layer cake then frosting and repeat.
Buy a jar of hot fudge (I like Smucker's brand) and heat up. pour generously over the top of the cake so that the entire top is covered. And yes, you want some of the fudge to drizzle over the sides.
The fudge will solidify and you'll be ready for transport. I also garnish the top with about 6 dollops of frosting around the circumference of the cake. Add a mint leaf to each dollop of frosting.
Trust me, this cake will be gone in 5 minutes flat. It's killer.
You can also modify this into cupcakes.
Everybody loves dessert. The cake resembles the taste of mint girl scout cookies. Have fun and good luck on this cake being the rave of the party!!

I bring my 3 bean casserole, always gets rave reviews:
Brown 1/3-1/2 lb bacon, cut into 1" pieces, with 1/2 diced onion. Add 1 lb hamburger and brown all together and drain the fat. Put this in a crock pot and add:
1 C ketchup
1/2 C brown sugar
S&P to taste
1 large can Bush's Baked Beans
1 can butter beans
1 can red kidney beans
2-3 TBS white vinegar
1 TBS liquid smoke (optional, I usually don't add in)
Mix together and cook on low for 4-5 hours. You could also put in a covered pan and bake in the oven on low. You can add any type of bean that you really like too.

I usually take Kahlua Cake and everyone loves it and I always get asked for this super-simple recipe!
2 boxes chocolate cake mix (bake as directed and then crumble up)
1 large tub cool whip
1 large box instant pudding (prepare as directed but substitute half of the milk for Kahlua)
3 Skor bars (or other toffe bars) crumbled well
In a large pretty punch bowl layer 1/3 of the cake followed by 1/3 of the pudding, 1/3 of the cool whip, and then sprinkle on one of the skor bars. Repeat so you have 3 layers of each. It turns out really pretty and tastes fabulous. A few cherries on top with a fresh mint leaf makes it look perfect!
Oh-- and I love that dish billy b was talking about too!

This sounds dull and too easy to believe, but my nephew said they are the best green beans he's had in his 25 years of life.
He said he knew it was because they were fresh. (They're not.)
Canned green beans (drained and rinsed)
Low sodium canned chicken boullion
Packaged real bacon bits
Place green beans in a skillet and pour enough boullion into the pan to cover about 1/2 of the beans. Cook over medium heat until the boullion is mostly evaporated. (Cook them at least 1/2 hour adding boullion if necessary.) Place beans into an oven safe dish. Pour in 1/4 to 1/2 of bacon bits. Place in a hot oven and bake for anywhere from 20 minutes until ___. Just make sure to add boullion if it all cooks off.

12 diced radishes
3 diced celery ribs
3 diced green onions
2 diced cucumbers
3 or 4 hand-fulls baby carrots diced
1 head broccoli diced ( top only ) save the stem and steam it for your supper
2 cloves garlic diced
1 container cherry tomatoes (whole)or grape tomatoes
some cracked black pepper
1 small bottle hidden Vally ranch (low fat or fat free)
1 small container low fat cottage cheese
add about 1/2 of the salad dressing and about 1/2 of the cottage cheese
mix well if it appears dry add more of each until it if well covered
i never take any of this home and i take the recipes on cards cause every ones wants it and are surprised its so simple to make

With all the fresh fruit available I would make a large fruit salad and serve it in half of a watermelon shell. If you are careful when cutting the watermelon you can even have a handle over the middle. Looks really neat ....May have to shave a little on bottom to get it to sit even. Do put it on a tray in case of any leaks. Can even surround it with fresh flowers.

My stuffed bread gets good reviews. You just make the bread dough in the machine, pound it out into a rectangle, and fill with pesto, pepperoni, pickled jalapenos, 1 can of green chiles, cheddar, feta, Parmesan, asiago, and Romano. Roll up the dough carefully and seal all the seams well, and bake as normal bread. When you cut slices, it comes out in beautiful pinwheels.
