Most use vegtable oil and some, such as KFC use lard. You also might want to ask if they fry chicken strips in with the fries. I recently had a guy at Ruby Tuesdays tell me theirs are fried in the same grease as the chicken tenders. It's nice to know other vegetarians are out there looking out for one another.

Let me just tell you good for asking!
Always ask! I have recently had french fries cooked in DUCK FAT, can you imagine! In some Countries (Ireland for example where I am currently) do not have health restrictions about what types of fat you are allowed to cook food in.
Most places use vegetable oils, such as canola, sunflower, safflower, and sometimes olive oil for specialty fries. Yum.
So good for you for wondering, I always ask the restaurant.

Special vegetable oil used only in commercial fryers used by Restaurateurs.Its less expensive and re-usable although gets hydrogenated.

Usually Canola oil (which had added defoaming ingredients and other nasty stuff). If anyone out there is using an animal fat, then it is lard.

They might cook them in trans fat but I don't think restaurants cook fries in fat. I think they use oil.
