Simple tofu nugget recipe:
1 lb extra firm tofu, drained
1/4 cup olive oil
1 tablespoon poultry seasoning
salt and pepper to taste
heat oven to 400*. Cube tofu into bite size pieces, then toss in oil and seasonings. Roast on cookie sheet for 20-30 min. or until golden brown and crispy on the outside. You can serve these with any sauce you would eat on chicken, or sub the nuggets for chicken in a stir fry or stew or whatever. Enjoy..............

1. Get a copy of the New Farm Vegetarian book and try the Sloppy Steve recipe.
2. Grill it up with BBQ Sauce. Needs to be either Very Firm or those Tofu Triangles. (Had this last night)
Key with all tofu is to make sure you have other things to give it flavor and I always prefer firmer tofu.
I also recommend the Morningstar and Boca meat replacement products that can be used in any meat type recipe fairly well.

Vegetarian Tofu Spinach Lasagna Recipe

Layered with crumbled tofu and plenty of spinach, this recipe for a vegan, cheeseless lasagna is hearty and flavorful. No cheese means this recipe is much lower in fat than other traditional lasagna recipes.
INGREDIENTS:
1/2 pound lasagna noodles
2 10-ounce packages frozen chopped spinach, thawed
1 pound soft tofu
1 pound firm tofu
1 tbsp sugar
1/4 cup soymilk
1/2 tsp garlic powder
2 tbsp lemon juice
3 tbsp minced fresh basil
2 tsp salt
1 32-ounce jar of tomato sauce
PREPARATION:
Prepare the lasagna noodles according to package directions. Drain carefully and set aside on a towel.
Pre-heat oven to 350 degrees.
Squeeze the spinach as dry as possible and set aside. Place the tofu, sugar, soymilk, garlic powder, lemon juice, basil and salt in a food processor or blender and blend until smooth.

Well, I kind of combined stuff from two recipes that I found at Vegcooking.com
I took stuff I didn't like out of the recipe and added stuf I did like.
So if you don't mind spending hours making this... you should try it, it was really good.

(by the way, You can always substitute the white truffle oil w/ olive oil... and almond butter w/ peanut butter... because those two things tend to be expensive)

First of all, what's up with that disgruntled look? Secondly, why are you trying to replace meats with tofu? If it's for weight loss, you should try another avenue. For starters if you are consuming meats now, its not bad, but try chicken breast or leaner meats. Then try substituting tofu in place of your starches. Dont forget to have your veggies with every meal. Broccoli and spinach are super veggies. Good luck in your endeavors.

I like the easy quick way of chopping it into little squares cook in a pan with olive oil & seasoning, I used spicy stuff lat night & all seasoning. I like soy sauce too. Cook until light brown. It's really good I think. I throw it on top of salads or has as a side dish.
