Here are tips:
1. Take your time - my journey from meat eater took about a year.
2. Start out using some basic substitutes for the meat you are used to in foods where you won't even notice - ground meat replacements are available in the frozen food sections.
3. Leave meat off things that don't need it - pizza, salad, spag, etc.
4. Get some good cookbooks when you are ready to branch into more interesting foods - Moosewood books and New Farm Vegetarian are two of my favorites.
5. If you are worried about what to eat check out the book "Diet for a New America" it will cover many of the health questions.
A good start is to pick one or two nights a week as "veggie" night. Then work your way from there stopping wherever you feel most comfortable which might be 2 nights a week or 7 nights a week up to you.

Cheese pizza is exceptional. Vegetarian chili (sans meat) is exceptional. Vegetarian lasagna is exceptional. Mashed potatoes with vegetable gravy...Tacos! Nachos. Something I love is a meatball sub with out the meatballs- simply the marinara sauce, cheese, mayo and scorching peppers. I'm now not exceptional with the vitamins facet of being vegetarian, however I do understand what tastes well. :)

I really like zuccini, grilled or fried.
Plus, vegetables fresh, canned, and frozen all taste different - so try different kinds and cooking!
Also, vegetables aren't everything. You still have all of your grains and fruits and nuts and such.
You just have to keep things balanced, and take vitamins to get nutrients harder to find in non-animal foods.

the key is variety! try making yourself a stir-fry with lots of veggies like zuchinni, tomatos, carrots, mushrooms, etc,etc. i really like eggplant and have found that it pretty much goes with anything. a good sandwich to try is a brocolli and cheese sandwich. make it just like a grilled cheese, but with brocolli. also, make sure to eat lots of beans so you get lots of protein. i like balck beans myself and they can be mixed with anything. i also love avocado! it' really good for you and you can eat in plain, or with salads, on a sandwich or as a dip for bread if mushed up. have fun!
