I dont want it buffet style. I have servers hired to walk around with the food, but I just need 10 different ideas for heavy hor devours.

my two faves:
1-raw jumbo prawns wrapped in fresh basil leaves and prosciutto and gilled on the BBQ. Peel and de-vein shrimp. get skewers and put shrimp onto skewers. them wrap some basil leaves , then prosciutto and puncture with the skewer so it all stays together. Cooks quickly, don't let the prosciutto burn, use lower flame.
2- Mushroom caps stuffed with crab, easy to make and bake. Pop out centers and clean mushrooms, fill with cooked crab meat mixed with Italian bread crumbs, garlic, salt & pepper. Bake at 375' for about 15-20 minutes or until mushrooms brown and crab warmed though and slightly crispy on top(keep an eye on it, could be alot less time depending on size of mushrooms)

Ok as a restaurant owner I have these suggestions:
Scallops wrapped in bacon, mini philo cups (available in supermarkets) filled with ham salad or chicken salad, or even tuna salad, decorate with sprigs of parsley & pieces of green olives & pimento. mini hot dogs wrapped in pastry. Spinach or cheese puffs ( which are also philo dough cut and folded to a triangle shape. Broiled/stuffed Clams on a half shell. Recipes for these items should be able to be found on the web. 4. Endive leaves with Crab salad in each
5. English cucumber circles topped with creme fraiche and
smoked salmon, with a dill sprig
6. Empanaditas
7. Mini tamales with a sweet mango salsa
8. Mini meatballs in a sweet and sour sauce
9. Bruschetta with goat cheese, drizzled with honey and topped with toasted pecans
10. Scallops wrapped with thin slices of peppered bacon

beggars purses...savory I would use wonton wraps, for sweet use puff pastry dough.

with black tie, it's all in presentation. There is a cook book called "Tapas" you can get at any bookstore. It has some really good ideas. Go to www.foodnetwork.com and search for tapas. Rachel Ray has some really easy ones.

Bacon wrapped chicken livers.
Strips of chicken and/or beef on skewer - and peanut dipping sauce.
Mini Quiches.
Mini cheesecakes.
Little cups with fruit chunks - serve with fancy toothpick (no fork).
