Here are tips:
1. Watch your cheese and other fat intake as it can increase when you go veggie.
2. Start out using some basic substitutes for the meat you are used to in foods where you won't even notice - ground meat replacements are available in the frozen food sections.
3. Leave meat off things that don't need it - pizza, salad, spag, etc.
4. Get some good cookbooks when you are ready to branch into more interesting foods - Moosewood books and New Farm Vegetarian are two of my favorites.
5. If you are worried about what to eat check out the book "Diet for a New America" it will cover many of the health questions.

Ugh (the answerers above)...especially the long party-pooper one.
Check out some vegetarian nutrition websties... read all that you can about... just eat enough beans, nuts, vegetables, fruits and you should be fine.
another tip: Umm, double, no triple, check ingredient labels. Sometimes reading them just once doesn't do any good( sometimes the words are so small, you miss little nasty things like "chicken fat")

Learn a lot about cooking with herbs and spices - without them vegetarian food can get pretty boring.

You are harming animals by not controlling populations by using them for food. Recall the food chain in school- Animals are part of it and the nutrition gained from protein that are complex that are not achieved from plants and this alone outweighs your unusual belief- True vegetarians need to understand that they are eating increased pesticides which are actually more harmful than the meat they refuse to eat. Even organic food contains traces of toxins. Meat is protected per a series of preventions from the acid in the stomach to the capillaries filtering out many harmful toxins that plants cannot- As well, if it is not cooked it can contain many more diseases which could kill you (e.Coli and pseudomonas) that cooked foods would not contain. So it is not the smart choice. The key is to eat balanced diet and not endulge your tastes. In other words, only IDIOTS are true vegans. Animals do not exist to eat each other only, we are also carniverous and made to devour them. Only Drug induced fools that are zin like are into the true vegan peta crowd. In fact , as long as animals are slaughtered in a humane manner, or research aimals are anesthetically demised correctly, then there should be nor problem with their use for either of these- Most medicines would not be established if it was not for their use in the animal controlled experiments. If so then 1 out of 3 of you would be dead because you would not have antibiotics to treat many infections you would come across from by eating plants because the antibiotics came from understanding how they worked on recpetors in animals-this can only be done through autopsy and microexamination. So we do not understand the receptors the drug binds to so we push science back 100 years and many of you would be dead from the e.coli you have eaten from infected spincach. The bactrim to treat this infection would have never been discovered and you would die at an early age- I guess animals do serve your puropose now- huh......Idiots
I am a doctor- I know eating plants that have been crapped on by the same animal you claim to protect is a little more disgusting than eating liver filtered acid degraded capillary filtered meat that is preserved in a living organism for its consumption- Why do you think the animal exists- to provide nutrition to others- if not others then it provides it to flies that land on it when it dies from eating too many infected plants- so let the flies and mags have it- you make no sense- Read more science and make a good arguement idiot. As well, stop taking all drugs if your a true vegan because every drug used animals for its FDA new drug apporval process....So with no drugs- you die......With no meat-- you wilt up.......Think aout it....
