Fresh, sushi-grade fish has no real smell. When it starts to spoil, that's when the horrific odors come out.

If you're eating a piece that has a seaweed wrapper or tie on it, it should be glossy and not flake apart easily.

The rice should be soft, plump, and shiny. If it's left out for too long it'll start to dry out, hardening to a dull finish.

I couldn't find any pictures of spoiled sushi, so I hope this helps!

Raw fish should be prepared and served within the day or next that it is caught. If it smells at all or has a slimy coating, you should probably stay away. If you are eating at a sushi bar, ask the cook to tell you where the fish came from and when they arrived. Or if they have fish tanks.

A general rule of thumb for any fish is that if it smells like fish, it's not fresh. Fresh fish smells like the ocean. If it's truly rotten, believe me you'll know by the odor and discolouration.
