Indians mostly eat in the thali form, that is, a plate consisting of rice, dal, chapatis or rotis, vegetable, sprouted moong, curds, papadam, chutney, pickle, salad of cucumber, raw tomatoes and green chillies, added to it, any sweet dish made from the combination of milk and bananas, and some savouries like pakodas etc.
in rural areas, people eat a roti called bhakri, which is made from jawar, bajara, or maka. their diet is simpler, and such varieties are served only on special occasions.
as far as the non veg.is concerned, it's made with spices, and fortified with ground coconut etc.
the way of cooking is different, and indians prefer well-cooked food. they also do not like it bland.
try out a simple combination of rotis with leafy veg. like spinach, dal-chawal with lemon and cleared butter, which is not fattening, rotis with sprouted moong semi-liquid curry, rice with egg curry, etc.
dosas and idlis are good for breakfast, also try making upma or sheera, by using rawa, for the breakfast.
add peanuts, and some dry fruits to these dishes, to add nutritional value.
use the spices like cardamom, cinamon, cloves, garlic, ginger, coriander seeds, fenugreek seeds, which are very good for health.

All daals & vegetables are very good for health. Most Indian meals are well balanced. Indian home cooking is very healthy, of course, everything in moderation. South Indian food is partucularly healthy.

Restaurant versions seem to have high fat content (butter, ghee, oil & cream), but you can always make & eat healthier versions at home.

here is a whole subdiscipline in India related to food & spiritual well being. This is essential to a healthy mind, body & spirit. It is part of the Hindu philosophy.

things which make a food unhealthy are oil, spices and salt. which are a basis in making indian foods... but unfortunately without these three, no food has taste, just like what chinese people eat which we can never have, they dont add salt, they just boil or steam foods and no spices at all... the chinese items which u see in india are not real chinese cuisisne..
so, we can say eating healthy is a habit which has to be developed in everybody, by reducing oil, u can save urself from heart and overall body malfunctions upto 30%, salt is a mineral which is so dangerous for people with high BP, and this is a problem which appears after the age of 35. before that u cant come to know wether u r suffring from high blood pressure or not, so its better to take precautions before its too late and use urself to a very very less amount of salt usage in ur daily diet.
fruits and vegetables are very important to keep on a good health. u need to consume fresh vegetables raw or streamed which is the best way to eat veg, boiling them kills the minerals and vitamins, fruits like orange, apple dates and grapes are like a complete food each and real sources for vitamins n minerals.
cereals are so important in a person's diet, consuming breads should not be replaced by rice because breads are containing a lot of fibres (specially brown bread)
so, eat less oil,less salt and less spices, dont kill the goodness of a food by frying it, try to eat steamed vegetables, dont eat so much of meat and chichken as they are harmful if u overcross the limit, sea food is a great source of vitamin D and the oil which for example u find inside a fish is noit fattening at all, its the best source of natural oil, so even if u dont take sea food, try to get the fish oil tablets which they sell in pharmacies, as your body needs vitamins to survive. drink a lot of water to help ur body in digestion and in order to have a healthy body.
any indian food can be healthy if u know the way to preserve the goodness of it.

All fish curries. Avoid fried fish.
All meat dishes - Usually Indian dishes are cooked well and hence relatively healthier.
All variants of rice recipes - Idli, Dosa, uttapam, pulav.
All green veggies.

most traditional indian foods are very well balanced so that they contain all essential nurtrients. so it will be hard to choose.
take for example the simple idli, it has rice for carbs, dal for protein and methi seeds for vitamins.
so here are my favs
all vegetable and dal preparations
idli ofcourse
roti, chappathi - fibre, iron, carbs and protein
rasam-pepper and cummin with garlic,hing relieves stomach problems.
stir fried vegetables(poriyal) such as cabbage,carrots,beans provide vitamins while providing an alternative to eating them raw.
dahi rice-cools the stomach, excellent diet for people with ulcers.
buttermilk wonderful source of nutrients sans the fat.

All vegetarian dishes are good to taste and also for health,as they have medicinal values.In genaral the moghalai and Hyderabadi dishes are tasty.

there are too many to list, but all the veggie dals and curries with spinach and chic peas, onions, lentils, yellow peas, split peas, tomatoes, potatoes are all good ingredients that are really good for you

watch out for the ghee, cream, butter and other fatty ingredients you don't really need! for a really creamy taste you can use some coconut milk but that can be fatty too so don't go crazy with it
