I don't really want chocolate milk. I need to be able to use it in cereal, having a glass of it, and maybe dipping cookies into.

You're not going to find soymilk that tastes like skim milk...

But I use vanilla soymilk in everything... cereal...coffee... anything... it is awesome... and in my opinion way better than cows milk. Silk is good.

I like Vanilla flavored soy milk! It makes everything taste wonderful including cereal.
I believe my usual brand is called "VitaSoy?"
Any soy milk would do. Start with a small container, and see if you like it.
Soy milk is either something you love or hate. It's sweeter than regular milk (the Vanilla anyway) and it does have a nutty-ish flavor.
Try and enjoy!

I'm a big fan of almond milk, too! Vanilla almond milk in cereal is DELICIOUS. I use it in cooking, too. The vanilla is mild enough that I never notice it in soups or pasta cream sauces or whatever I'm using it for. Chocolate almond milk is beyond yummy, too! I'm not all that fond of soy milk and, although I've read articles that refute the claims of anti-soy people (see link from answer above) I do try and limit my intake. Almond and rice milks help me with that.

Well, if you're looking for something closes to the consistency and flavour of skim milk, I highly recommend Rice Dream. Cold rice milk really comes closest to nonfat cow's milk. Soy milk all tends to lean closer to the flavour of whole cow's milk. If you specifically are looking for soymilk only, however, I recommend 8th Continent, whose texture is the smoothest of any soymilks I've drunk.

there are so many brands and types of soymilk. Sweetened, Unsweetened, Vanilla, Carob (or mocha), etc.

I got started on Edensoy Vanilla, but you can try any other brand of soymilk. Experment and see what you like. You won't know until you try it. Different brands taste different to everybody. I also tried a generic supermarket organic plain soymilk which tasted really good for the price.

Soy milk is harmful to the body in many ways. Constituents of soy block the absorption of minerals and inhibit enzymes. Consumption of soy is linked to birth defects, brain damage, stunted growth, thyroid dysfunction, and many other disorders:

Try cashew milk instead. It's delicious and very easy to make. Place two cups of raw cashews in a good blender. Add cold water to not quite cover the cashews. Blend on high speed until creamy, then slowly add more water to two or three inches below the top of the blender's carafe while blending on slow speed. Enjoy!

I prefer Silk. Nice taste, but if you have an Aldi's store nearby, they put out a good one also. Why totally switch? More research is coming out showing neither are the best, nor the worst for you. It's all about moderation, tho.
