... but there are some things that are going to be difficult. Mainly, I usually cook really extravagant/ gormet dinner... always have. What I am asking is where can you find really gormet recipes that are wonderful..... I don't care at all about time in preparation..... but I don't want to give up my cooking talent and I can't very well cook with meat or I will want to eat it.
Can you give me any recipes or sites where they have this kind of thing that is strictly vegetarian?
Thanks.

I also love to cook and take great pleasure in cooking elaborate meals. You can continue to make your favorite dishes - just substitute vegan ingredients - get creative.
I also subscribe to Vegetarian Times. It's all right.
The internet is your best source for recipes. I usually just get in the mood to make something and then google whatever it is with the word vegan and BAM there's a recipe. Most of the time it turns out okay although I'm not too thrilled with some of the cake recipes I've tried online.
Here's a few recipes I've made recently that were fantastic...
Spinach and Artichoke Dip (I used frozen artichoke hearts and no flour, but added vegan parmesan topping): http://vegan-licious.blogspot.com/2006/03/spinach-artichoke-dip-oooh-this-is.html
Zucchini Boats (I chopped up some TOFURKEY sun dried tomato sausage and added it to the mix - it was awesome - I baked at 350 for about 45 minutes or so): http://www.vegan-food.net/recipe/296/Zucchini-Boats/
Come on...ONE sinful recipe: http://www.recipezaar.com/106627
I also go really crazy with the salads. There are so many interesting vegetables and dressings out there, not to mention different toppings (like homemade croutons or candied spiced nuts or tortilla strips, etc.). I am a big fan of the themed salad with a very small side dish. Think big chinese salad with one eggroll or a huge green salad with a cup of creamed tomato soup).
I also am very fond of creative soups and chilis. You definitely will not get bored cooking veg. Quite the opposite. I have never been so inspired to create dishes with fresh ingredients. I've had to learn a whole new way to cook and it's all been very exciting.
Vegan-Food.Net is probably your best best to find more gourmet recipes, but they've all got good stuff so just do some searches.
Have fun!

Well, one thing you could do is subscribe to a vegetarian magazine. Personally, I like vegetarian times. In fact, they recently had an issue with an article on fancy dishes!
I am sure there are many cookbooks of gourmet vegetarian. You should look on amazon.com, or at your local bookstore.

Have fun! Being a vegetarian is great, and I have no doubt that you'll find all you need.

Are you just staying away from meats, or are you going vegan (no dairy or eggs)? There are lots of good recipes that don't require meat, but still use dairy (quiches, souffles...)
lime.com has some recipes, as does foodnetwork.com
Try checking out some books at your local library before investing in a cookbook.
Bon Appetit!

healthy-eating.com has a lot of ingredients you might find useful. They also have an extensive book section where you'll find a wide range of vegetarian & vegan cookbooks including cuisine from deveral cultures as well as nutritional and lifestyle guides. You may also find recipes at vegetariantimes.com and lots of other veggie websites.

Wow, good luck! I've tried and it's too hard for me.
Use a variety of vegetables for vitamins and minerals, the more colorful the better!
And soy for protein is always good and supplements if necessary.
I don't know much about vegetarian cooking, but I do love tofu and eggplant.
Again, good luck!
