Southern Style Potato Salad
New potatoes cut in 1/4 & boiled
Chopped onion
Chopped dill pickles
Minced garlic
Dressing: Equal amounts of Mayonnaise and Mustard, and add dill pickle juice until the taste jumps out at you. You'll know when. Pepper to taste and salt if needed - the pickle juice is salty.
Pour the dressing on the veggies and let it sit in the refrigerator for an hour or so, until it chills. This MUST be kept chilled, because of the Mayo.

Potato Salad: I always eye ball mine so nothing exact here but this is what I put in it. Potatoes- boiled until tender, then peeled and cut into about 1 in cubes (bite sized), then cooled. Chopped red or white onion Hard boiled eggs Pickles cut up or relish of need be Celery optional Mayo Mustard Dill And a splash of pickle juice. Mix the mayo and mustard to taste. Mix in the with remaining ingrediants, and chill a couple of hours for the best taste. Or this one is really good too: Zesty Potato Salad: 1 1/2 pounds red potatoes 1/4erd 1/2 cup italian dressing 1/4 spicy brown mustard 1 cup sliced celery 1/4 minced parsley 2 tbsp chopped green onion Boil the potatoes until they are fork tender, drian. Meanwhile mix the dressing and mustard together with the parsley. Pour over the potatoes, celery, and green onions. Toss to coat, cover and chill a couple of hours before serving.

Cook the potatoes whole, then cool and cut into 1/2 inch cubes. Cooking them whole avoids mashed potato salad.
- add diced boiled eggs, celery, (either sweet onion or green onion) miracle whip, and a little mustard along with diced pickles and a little of the juice. You can add a little chopped fresh dill also which is really good. Mix well, and refrigerate. This is always a better recipe the next day, but is good either way. Good luck with your potato salad.

Yes-keep it real simple. Boil potato's, cool them, slice them in criss-cut fashion, add mayo, a little mustard, salt to your taste, and then the final BEST - Dill pickle sliced up and cubed, then the trick of adding some of the dill pickle JUICE into entire bowl. Now your ready to mix it all very good, let cool and enjoy!!! I enjoy it with more of the mayo (wife does not) and it makes a fantastic simple cool potato salad.

Only use red potatoes, they are the healthiest. Boil potatoes with skin in water for 30 to 45 minutes, let cool and peel off skin. Chop in cubes, add oil, fresh parsley, fresh garlic, and fresh chives. Healthy and very tasty!

Good recipe,...but please use mock mayo...its made from milk and milk amino acids dilute quicker in the blood as cows milk is actually synthesized from its own blood( Did you ever know that?)..
