My brother has diabetes type 1, it means he needs to inject insulin every day. It's important when he go to see a doctor to also get an appointment scheduled with a nutritionist.
The amount of food he needs to eat is based part on his weight.
You need to be careful with carbs, because they turn in to glucose and you want to keep those levels low.
Because Europe and the USA have a different rate system for glucose levels, I can't give you those, because the doctor can tell what works for him.
Nowadays diabetes is very easy to live with, you only need to make some life adjustments and that takes time to get used to, but it all will work out. He needs your support.

He needs to consume adequate protein, fats and only healthy, whole carbohydrates.

This means pretty much all meats, poultry and seafood, dairy, eggs and soy products are great.

Non-starchy vegetables are also terrific and both of these groups can be pretty much unlimited.

Starches, like breads, pasta, rice and potatoes need to be kept to moderate or low levels. Whole grains are better tolerated than "white" versions. This limitation includes corn and peas.

Fruit needs to also be kept to lower levels, but not all fruits are a problem to diabetics. Most berries are still very good, as can be citrus and apples. Sweeter fruits, like grapes, cherries, soft fruits and melons should be limited to small quantities or infrequent occasions. Fruit juice is going to spike blood sugar so avoid it unless he's in a critical "low" in which case a little juice can actually be a lifesaver.

Sugars are best avoided completely, but especially junk food and foods containing high fructose corn syrup. Almost everything pre-packaged or fast food contains it, even foods you wouldn't think about. This means you need to become a label reader.

It is wise to invest the time learning about the glycemic index of foods (it measures how fast a food converts to sugar) and stick to lower index foods.

Both Atkins and South Beach Diets are wonderful for diabetics.

IF he can stick to a low carb diet and add some exercise, and probably lose weight, he can live a high quality, healthy life and might even be able to avoid insulin.

The penalties for not being strict with his lifestyle are severe. He can lose his eyes, and limbs, suffer a heart attack or lose any organ, or develop neuropathy (constant nerve pain). He may lose the ability to get an erection permanently.

My dad wasn't good and he's now extremely miserable. Most type II diabetes is the direct result of a poor diet and inadequate exercise.

You should be eating like him too. Not only will it make it easier for him if the whole family eats the same foods (and bans the bad stuff from the house), but it will keep you healthier too.

You can take classes that will help the transition go easier on both of you.

Basically, limited carbohydrates is best. Exactly HOW limited depends on his exact condition, type of diabetes, how much exercise he gets, his other health conditions, etc.

If his condition has already diagnosed, then the doctor can either recommend a diet, or may refer him to a nutritionist. For some diabetics, it doesn't take much to make blood sugar go out of control. For others, complex carbs such as those in veggies are easier for the body to metabolise, while the simple sugars, such as candy and soda pop are the only things they have to really watch.

The only way to know this is by regular blood glucose readings, say, three or four times a day.

The two of you will attend a doctors appointment and a diabetes ed class and a visit to a dietitian.
Read everything you can about diabetes that has been written in the past five years.Subscribe to many diabetes magazines and keep up on what is going on in the world of diabetes.
It's tough in the beginning but you will get it soon.
You can start by counting carbs.Get a good book and read labels.

The best advice is to see a nutritionist and test your blood sugar daily. It is true that carbohydrates will turn to glucose sooner than other foods, but almost all foods must turn into glucose because glucose is the food the body burns to get energy. The important thing is to try to eat more complex carbohydrates because the body has to burn energy in order to break it down into glucose. That is why fruit is a better source of sugar (fructose) than table sugar (sucrose).
Vegetables are VERY good, particularly high fiber vegetables. Fiber is more complex. Celery, cucumbers, broccoli, and cauliflower are good to snack on, are low in calories, and fill you up for a while.
Some beans are better than other, such as black beans (good) versus brown beans (more carbs). Weight watchers bread is better than regular bread, especially white bread. Start reading food labels and buy foods with lower carbohydrates. Calories can be important since more calories usually means higher carbohydrates. Eating meats can sustain you longer over time, but chicken and fish are better than beef. I tend to eat a lot of salad, and very little bread. These are a few things I watch out for. Good luck.

Sugar free. Lots of Organic veggies.
NO Artifi. Sweetners! Please. If you Love your husband do not feed him artificial sweetners. People give me 'heat' when I say that but trust me.
Those sweetners contain ASPARTAME which is a posionous chemical.
