Low country boil...Old Bay seasoning, potatoes, corn on the cob, kielbasa sausage, and shrimp. Boil the potatoes first in the water w/Old Bay, then add the sausage and the corn, add the shrimp last, and serve with salad, crusty bread, melted butter and cocktail sauce!
Some people cover the table with newspaper and pour the whole pot (drained, of course!) down the middle of the table, but you can alwayse serve it more civilized if you want to in large bowls or pans. You can easily serve 20 people with a low country boil, and the sausage, corn, and potatoes really stretch your shrimp. Even with 'big eaters', you don't need to anticipate more than 1/2 pound of shrimp per person.

Replace the lasagna with thinly sliced egg plant that has been baked at 200 C/400 F for 10 minutes. This is absolutely delicious, and will make your gluten allergics happy (as well as any Atkins dieters). Be careful about the salad -- make people put on their own croutons or toppings, and many dressings have flour in there, too.
Garlic bread would be optional -- maybe serve a garlic potato dish as well.
I don't think you can go wrong with ice cream for dessert -- unless people have dairy allergies )-:.
Good for you for planning around your friend!
Oh, another possibility is to make it pot-luck, and have the gluten-guy bring something non-allergenic.

When I cook for lots of people, I tend to make a big stew, like Boeuf Bourguignon, for example... If you make the Beef the day before, you can degrease it easily by leaving it in the fridge overnight and taking off the crust of fat that forms, leaving you with a lovely sauce, and just add sauteed mushroooms at the end. Then you can serve potatoes as your starch instead of pasta.
A very easy alternative is to make a roast (beef, veal, pork, lamb...as you like) and to make a sauce for it.
The problem with grilling salmon is that you can't serve everyone at the same time, but maybe that's not a problem. If it's an outdoor affair, you could make a huge bowl of ceviche, for example, before something classic like roast beef.

Sounds like you want to make a "one dish meal".
That is usually a good idea, so go with a jambalaya or a stir fry, that way you have a choice of meat or fish or a combination, with rice and frozen vegetables.
One dish and much fun without a lot of washing up.
Also think of a fondue.
Very popular some time ago, and only because it was fun and simple.
Enjoy

I really like making pesto chicken - get 4 chicken breasts, 2 cans of pesto sauce and mozarella cheese. Place a little pesto in a dish then the chicken breasts on top of that, cover in pesto and then put a handful of mozarella on top, place in the oven on 350 for 1 hour covered in foil. Uncover and brown mozarella cheese a little. You can also make this with baked cheese tomatoes. Slice tomatoes in half, take out the inside of the tomatoe and place in bowl. Add some mozarella cheese, parmasan cheese and italian seasoning and mix. place back in the tomatoe and cook in the oven for 20 mins until bubbling cheese and soft tomatoes. Enjoy.... this recipe is a hit with all of my friends and family.
