On my TV's box, it says it only supports resolutions up to 1080i, but when i select 1080p with my XBOX 360, the TV doesn't mess up or anything. Will running it like this be damaging at all to the TV if it "doesn't support it" but still displays it with no apparent problems?

Your TV just scales 1080p to its native resolution of 720p.
Depending on your source, you may introduce unnecessary scaling: xbox scales up to 1080p, your TV scales down to 720p.

There is no damage to the TV, but it is better if you feed it a signal that matches its native resolution (1080i or 720p) so you reduce the amount of scaling and processing - which always introduces noise.

This is a small guess, but your TV might be just downscaling it to 1080i because that's as high as it can go.

If you select a lower HD setting with your xbox 360 do you notice a difference?

It's not going to hurt it....that's because your X-box is outputting 1080i....
