I had a baked potato in a restaraunt once that was absolutely delicious and have tried to make one like it at home with no luck. It was obviously baked wrapped in foil as that is the was it came to the table. The skin had been coverd in butter and then rolled in garlic salt. It was SCRUMPTIOUS! However when I tried it at home, as the potato baked and the butter melted, it seeped out of the foil and dripped all over the bottom of my oven and made a mess (not to mention the smoke it created). Any suggestions as to how I can make this potato without setting off the smoke alarm and having to break out the EZ- OFF oven cleaner immediately after I cook?

I have made so many baked potatoes and have never covered them in tin foil. Here is my suggestion. Take about a teaspoon or two of butter or olive oil and rub it all over the potato until the whole potato is completely covered and feels quite greasy. You can if you like now roll the potato in the garlic salt although I would probably cut the potato in half after it is fully baked and add the salt then. The oven should be preheated to 400 degrees before putting in the potato. Put a piece of tin foil on the bottom to catch any drippings. It is perfectly safe to do this. The final trick is to bake the potato long enough. I would give it about an hour to an hour and a half, depending upon the size and turn it at least once while it is baking. Prick it with a fork to see if it is done. The fork should go right through and the potato should offer no resistance. I am already drooling thinking about it. YUM!

I read that the secret to great baked potatoes is to bake them in salt. Literally. I was only baking two potatoes, so in a loaf pan (for making bread), I put a thin layer of Kosher salt (it's coarse), the potatoes, and then filled the pan up with salt, covering the potatoes. I baked them at 400 for an hour, and they turned out great. I guess you could do the butter and garlic salt after you take them out, or before baking if you wrapped them in aluminum foil.

Make it twice based by cooking for an hour in a 325', scoop it out, add olive oil with black truffles in it, some saved black truffles, a little butter, some parmesan cheese, with a parmesan cheese topping the potatoes. Bake for another 25 mins then serve with a simple grilled steak or lamb chop or salmon and a simple vegetable. Awesome!

I agree with you potatoes done this way are delicious.Next time that you do them this way use a double layer of foil,and put them in a roasting dish.Yum,Enjoy.
