Speaking only in terms of grammar, 'The yolk of an egg is white.' is correct, but the way the layman sees it, none of the two sentences are right. "The yolk of an egg is yellow" is absolutely right both gramatically and practically.

or

the shell (outershell or so , but i dont know whats it called?) of an egg is white
