Banana Bread (I have tried this, pretty good)
* 1 tsp. baking soda
* 2 eggs
* 1 tsp. vanilla
* 1/4 c. margarine (4 Tbsp.)
* 1 c. very ripe bananas (3 bananas)
* nuts (optional)
* 1 1/2 c. sugar
* 1 tsp. baking powder
* 1 1/2 c. flour
- Mix ingredients. Grease bottom of 1 bread loaf pan.
- Bake at 350 degrees till pick tests done, about an hour. Turn out while hot. Wrap in wax paper.
Moist Banana Bread
* 1 C Sour Milk
* 4 Ripe Bananas, mashed
* 4 Eggs
* 4 C Flour
* 1 C Butter
* 1 Tsp Salt
* 2 C Sugar
* 2 Tsp. Lemon Juice
* 2 Tsp. Soda
* 1 Tsp. Baking Powder
Cream sugar and butter very well; add eggs and beat well. Add sour cream with soda; Add bananas. Add dry ingredients and beat well. Add lemon juice, can also add nuts if you like. Bake at 350 for 50-60 min. Bake 3 regular size breads.
Sweet Banana Bread
Note: Nuts can be added, if desired.
Servings: 12
Ingredients:
1 3/4 cups all-purpose flour
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
1 (3 ounce) package non-instant vanilla pudding mix
2/3 cup white sugar
1/2 cup shortening
2 eggs
2 tablespoons milk
1 1/3 cups mashed ripe banana
1/3 cup chopped walnuts
Directions:
1. In a small bowl, sift together flour, baking powder, baking soda, salt and vanilla pudding mix. In a large mixing bowl, beat sugar and shortening until light, scraping sides of the bowl often. Add the eggs one at a time, beating smooth after each addition. Mix in the milk.
2. Add flour mixture and mashed bananas alternately to creamed mixture, beating until smooth after each addition. Fold in nuts if desired. Pour batter into a lightly greased 8x4 inch loaf pan.
3. Bake in a cold, (non-preheated) oven set to 350 degrees F (175 degrees C). Bake for 50 minutes, then cover with foil to prevent burning and bake for additional 10 to 20 minutes or until toothpick inserted into the crown comes out clean. Leave in pan for 10 minutes, then remove from pan and cool.

Mrs. Hockmeyer's Banana Bread
3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar (can easily reduce to 3/4 cup)
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cup of flour
(optional) 1 cup of crushed walnuts or 1 cup of chocolate chips can be stirred in at the end before pouring batter into the pan
No need for a mixer for this recipe. Preheat the oven to 350°F. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.

BANANA BREAD
2 1/2 cups white or white whole wheat flour
1 teaspoon baking soda
1 teaspoon salt
1 cup vegetable shortening
2 cups sugar
2 cups over-ripe mashed bananas
4 eggs, beaten
1 cup chopped nuts
1 tablespoon banana liqueur or dark rum
Preheat oven to 350F.
Combine flour, baking soda and salt; stir to mix well.
In the bowl of an electric mixer, beat together shortening, sugar, mashed bananas, and eggs. When well beaten, gradually add the flour mixture while mixture is at lowest speed. Mix only until combined.
Stir in the banana liqueur or rum and the chopped walnuts, pecans, hazelnuts or macadamia nuts.
Butter and flour a loaf pan. Bake for 65-70 minutes or until cake tests done (toothpick inserted in center comes out clean).
Remove from oven and allow to sit for several minutes. Run a bread knife around edges of loaf pan to free it from sides and remove from pan. Rub the top of the still-warm loaf with a pat of butter to soften and glaze the top, if desired.
Serve with whipped cream cheese spread on each slice.

Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

This is the recipe I use whenever I have overly ripe bananas.
INGREDIENTS:
3-1/2 cups flour
1-1/3 cups sugar
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 cup butter-flavored solid shortening
1 cup chopped nuts, lightly toasted
4 medium bananas, mashed
4 eggs, slightly beaten
PREPARATION:
Day Before serving:
Preheat oven to 350 degrees F. Grease and flour 2 - 9" by 5" loaf pans. Mix the first 5 ingredients with a fork. Cut the shortening in with two knives or a pastry cutter. Add the nuts. Add bananas and eggs and stir only until batter is moistened. Spread batter evenly in the two pans.
Bake for 50 minutes to an hour. Use a toothpick to test for doneness. Cool in pans on wire racks for 10 minutes.
Remove from pans and completely cool on wire racks. Keep one loaf out for serving the next day. Freeze the second loaf for later.
Notes in the Margin:
I make this bread for my daughter's school snacks using shaped baking tubes. (Mine come in heart, clover leaf and daisy shapes. So when you slice the bread it comes out in those shapes.) Despite the directions that come with the tubes, I grease mine with cooking spray. I then cover the bottoms with foil and then put the bottom lid on. Fill them only 1/2 way or they'll overflow.

Coll's Banana Bread
2½ cups flour
1 tsp. salt
2 tsp. baking soda
1 cup Margarine
2 cups sugar
2 cups mashed ripe bananas (4-6)
4 eggs - slightly beaten
Variations:
1 cup chopped walnuts
½ cups mini chocolate chips
½cups craisins
Preheat oven to 350°. Grease and flour pan (muffin or loaf pan)
Stir & toss together flour, salt, baking soda, set aside.
In a large bowl combine margarine, sugar, eggs and bananas until well blended.
Add the combined dry ingredients until batter is thoroughly blended.
Pour into loaf pan or muffin tins.
Baking Instructions & Timing:
Full recipe makes:
4 mini loaf pans ( 45 mins..)
24 mini muffins (15-17 mins..)
18 large Muffins ( 25 mins..)
2 loaf pans ( 65-70 mins..)
Muffins & bread will turn dark brown, Check center for doneness with a bamboo skewer.
Remove from oven, let cool for 5 minutes before inverting

Cabana Banana Bread
½ cup butter, softened (1 stick)
2 csup firmly packed light brown sugar
4 med. size ripe bananas, mashed
4 eggs
½ cup veg oil
1 cup pineapple yogurt
½ cup crushed pineapple, very well drained
1 tsp. vanilla
½ tsp. coconut extract
3 cups.flour
2 tsp. baking soda
½ tsp. salt
½ cup shredded coconut
Oven at 350
Cream butter and sugar till light and fluffy. Beat in bananas, beat in eggs one at a time. Blend in oil. Mix in all remaining ingred. except coconut. Divide batter between tow greased loaf pans. Sprinkle coconut evenly over tops of loaves. Bake 50-60 mts. Let cool 5 mts before removing from pans.

use any basic banana bread recipe from the internet or a cookbook, but to make it REALLY good, make a crust of brown sugar and nuts, chopped fine, with a little nutmeg and cinnamon, sprinkle on top (heavily) before baking.
