2 1/2 cups sugar
1 cup water


Punch holes at the top of a thin 8 inch square pan and lace about 7 strings from one side to the other side. Place the laced pan in a pan deep enough to catch any leaking syrup. Dissolve sugar in water and cook without stirring to about hard ball stage (247°F - 252° F). Pour syrup into laced pan. It should reach a level about 3/4 inches above the strings. Cover the surface with a piece of foil. Watch and wait. The syrup sometimes takes a week to crystallize. Lift out the laced pan. Cut the strings and dislodge the rock candy. Rinse quickly in cold water put on racks in a very low oven to dry.

Sugar is dissolved in hot water. The hotter the water, the more sugar it can hold in solution. Then the syrup is cooled. Now, if you were to drop a grain of sugar into this, the "extra" sugar in suspension would "fall out", clinging to that sugar crystal and making big "rocks" of sugar. (Incidently, the shapes the rocks form are the same shapes the tiny molecules of sugar form! Cool, huh?!)

So tomake rock candy, you have this cooled, super-concentrated sugar solution. You suspend a string or stick into the solution that has been "baited" w/ a few grains of sugar. And just wait. Rock candy crystals will grow, attachign themselves to the stiring or stick!

4 cups water, one cup sugar. heat until dissolved, do NOT boil! pour into clear glass, put rock candy sticks (or a sting tied to a pencil and laid across the top of the glass so the string hangs in the solution). takes an hour to a week. crystals will form after an hour, but the longer you wait, the better the crystals! add food coloring for colored candy. so much fun!

all it really is ...
melt some sugar
add desired flavoring and coloring
pour into greased baking sheet
let dry, then smash with hammar
put broken pieces into ziplock bags, along with some powdered sugar, and shake till pieces are coated with powder
eat and enjoy!
