ok, i went to this japanese buffet and im not sure what its called. It was a salty soup, it had lots of scalions in it, it had very thick yet short noodles, there were red dots in it- im assumping a sort of red spice, it was served with one bredded shrimp in it. It was dark in color , any idea what soup this might be?

also had tofu in it, the tofu used had a pink trim on it too

hmm,maybe some kind of miso broth with udong noodles... it sounds really good!
sorry, I don't know a specific name.
It will be nice to hear from someone with a more definitve answer! :)

Based on what was also in the soup I'm pretty sure that it's Miso soup. Miso is made from fermented soy bean curd and the soup made from it is pretty much a regular item in Japanese restaurants. There are many different ways to "garnish" the soup. Also are you sure that it was tofu and not kamaboko (japanese style fish cake) that was in there. Most kamaboko is sort of half-moon shaped and has a pink border on the curved side while the rest is white.

Maybe this one.(Can't give u the recipe without the name)

Miso Shiru Soup
5 cups dashi (recipe following)
2 tablespoons miso (red bean paste)
4 ounces firm tofu, cube into 1/2 ' cubes
2 green onions, sliced diagonally
2 mushrooms

Dashi Ingredients
6 cups water
1 piece kelp (2 inch square)
3 ounces bonito tuna or 3 tablespoons dried bonito flakes

----------Makethe dashi---------.
Bring water to a boil.
Wash Kelp under cold water tap.
Add to water when it comes to a boil.
Stir and let boil 3 minutes.
Remove kelp from the water and add the bonito.
Allow to come to boil and remove from heat immediately.
Let it settle for a few minutes.
Strain off the bonito and set aside for whenever you need the dashi.
---------Makethe Miso Shiru-----------.
Bring the dashi to a boil.
Mix a little hot liquid with the bean paste, stirring until smooth.
Pour mixture back into the saucepan, stir well.
Add tofu and return to boil.
Simmer for a few seconds only.
Ladle into bowls and garnish with green onion and a slice or two of mushroom.

If it was cloudy when you stirred it, then settle back to clear in a couple minutes, it was miso. Sounds like they added the noodles and shrimp tomake it heartier. Usually miso has nothing in it but a few flecks of seaweed or something.

if you have a world market anywhere near you, you can buy packets of miso soup. the kind where you just add water and it tastes just like the ones in the japanese restaurants.
