Just wondering.. oh and please don't just say they're scared ya I get that but why???

It is a survival reflex - they haven't had a chance to get scared yet - they are jumping because for millions of years the people who jumped were alert and ready when wild beasts or attacking enemy came out of the dark. That is why the stupid game played by some brats of making a loud noise and then saying "nah nah, you jumped" is so stupid.

It's probably just the fight or flight reflex. If you don't know who or what is behind you then your body prepares for it being an enemy that you're either gonna fight or run away from and then when you see who it is your body calms down. If you didn't do that and it really was some dangerous thing or person or something then you would be at even more of a disadvantage. This was probably more useful way back in like prehistoric times and things like that. Not that it isn't useful now but in that situation...

I recently read, and hopefully this is not why you asked, but being easily startled is one sign of post-traumatic stress disorder. Which I have been diagnosed with after a lot of traumatic events in my life.
My coworkers make fun of me because they are always making me jump...just the slightest tap on my office door window and I am off my seat.
Whatever the reason, it sucks...but it sure keeps you awake...swift pulsed, but awake nontheless!

Maria - All animals have a "FIGHT OR FLIGHT" instinct. One of the humans inborn emotions is "Startlement." When something unexpected happens, the person jumps then freezes as the body prepares to "Fight" and defend itself or "Flight" run for it's life.

Its called the "startle response". I, for one, have an exaggerated startle response which makes me extremely jumpy.
