I a big fan of garlic and olive oil with shrimp. Its healthy and very easy to make. Pour a few tablespoons of olive oil in a warm pan and toss in some fresh chopped garlic. toss in some fresh basil and salt and pepper. If you have fresh broccoli, I would put some in also and then your shrimp. Just gently stir together until the shrimp are cooked, aboue 5 minutes or so. Then use it as a topping over angel hair pasta. So good.

Shrimp a la scampi!

Saute shrimp with a couple of minced garlic cloves, a bunch of chopped green onion, 1/4 C lemon juice and some salt and pepper in a mixture of half butter and half olive oil. When shrimp is cooked through, add a cup of fresh chopped tomatoes and some fresh chopped parsley and simmer until tomato is heated through.

Serve on top of hot buttered pasta. Delish!

Tip- if you like spinach add some thawed drained chopped frozen spinach when you are sauteeing the shrimp.

What kind of fresh veggies do you have? A shrimp stir fry would be quick, easy, and delicious.

You could use a combination of any of the following: mushrooms, snow peas, green beans, celery cut on the diagonal, peeled and thinly sliced carrots, peeled and seeded tomatoes cut into quarters, etc.

Stir fry them in a little oil until crisp-tender, and add the shrimp. Cook until the shrimp are pink, then add a splash of soy sauce, teriyaki sauce, or a little chicken broth thickened with corn starch and seasoned with minced garlic. Serve over rice, egg noodles, or chow mein noodles.

Shrimp scampi might be too elaborate with the ingredients you probably have.

Saute them in butter, garlic, pepper and poor them over a buttered pasta.
