Angel Hair Pasta with Shrimp and Basil

INGREDIENTS
1/4 cup olive oil, divided
1 (8 ounce) package angel hair pasta
1 teaspoon chopped garlic
1 pound large shrimp - peeled and deveined
2 (28 ounce) cans Italian-style diced tomatoes, drained
1/2 cup dry white wine
1/4 cup chopped parsley
3 tablespoons chopped fresh basil
3 tablespoons freshly grated Parmesan cheese

DIRECTIONS
Bring a large pot of water to a boil, and add 1 tablespoon oil. Cook pasta in boiling water until al dente. Place pasta in a colander, and give it a quick rinse with cold water.
Heat remaining olive oil in a 10 inch skillet over medium heat. Cook garlic, stirring constantly, until the garlic is tender, about 1 minute. Do not let the garlic burn. Add shrimp, and cook for 3 to 5 minutes. Remove shrimp from the skillet, and set aside.
Stir tomatoes, wine, parsley, and basil into the skillet. Continue cooking, stirring occasionally, until liquid is reduced by half, 8 to 12 minutes. Add shrimp, and continue cooking until the shrimp are heated through, about 2 to 3 minutes. Serve the shrimp mixture over the pasta. Sprinkle with Parmesan cheese.

i like... Penne with 5 Cheeses

Kosher salt
2 C. heavy cream
1 C. crushed tomatoes in thick tomato puree
1/2 c freshly grated Pecorino Romano (1 1/2 oz.)
1/2 c. shredded imported Italian fontina (1 1/2 oz.)
1/4 c. crumbled Italian Gorgonzola (1 1/2 oz.)
2 tablespoons ricotta cheese
1/4 pound fresh mozzarella, sliced
6 fresh basil leaves, chopped
1 pound imported penne rigate pasta
4 tablespoons (1/2 stick) unsalted butter

Preheat oven to 500 degrees F.
Bring 5 quarts of salted water to a boil in a stockpot.
Combine all the ingredients except the penne and butter in a large mixing bowl. Mix well.
Drop the penne into the boiling water and parboil for 4 minutes. Drain well in a colander and add to the ingredients in the mixing bowl, tossing to combine. Divide the pasta mixture among 6 shallow ceramic gratin dishes (1 1/2 to 2 c. capacity) Dot with the butter and bake until bubbly brown on top, 7 to 10 minutes.

I love Dorito Chicken. Yummmmy. Here's the recipe.
3 1/2 lbs chicken
1-7 1/2 oz pkg Doritos
1 stick butter
1 can Rotel
2 cans cream of chicken soup
1 lb grated cheese
1 large onion, chopped

Boil chicken until tender and remove from bone. Break into bite size pieces. Oil a 9x13 pan and line with Doritos. Place chicken on Doritos. Heat cheese and Rotel until cheese melts. Add onion and soup. Pour over chicken. Bake at 350 degrees for about 20 minutes.

Pea & Peanut Salad

1 (40 oz.) pkg. Frozen peas
2 c. Spanish peanuts
1 1/2 c. Mayonnaise
1/2 t. Garlic powder

1. Rinse peas under cold running water in a colander to thaw; drain well.
2. Add peanuts, mayonnaise, and garlic powder; toss well. Refrigerate.

Stuffed jalapenos

cut jalapenos in half then deseed
fill with cream cheese and a sliver of onion
wrap with1/2 piece bacon and secure with toothpick
cook on grill or in oven on drip pan so bacon will crisp on bottom 350 until crispy
