it all depends. if you leave them on the cookie sheet, they'll continue to bake and will become hard as a rock. if you take them off the sheet (after about a minute or so) and do not store them w/in a reasonable amount of time, it will probably take about 45 minutes for them to get hard.

That depends on two things - the humidity in your kitchen, and the amount of liquid still in the cookie.
"Sort" cookies are generally made with extra shortning (fat will not get hard), and cookies with little or no fat must be eaten before the water evaporates from them, else they turn hard rather rapidly...

SOME COOKIES BECOME HARD IN AS LITTLE AS 10 MINUTES.PERSONALLY I USE PLASTIC BAGS.IF YOU LET THEM COOL ENOUGH TO HANDEL,THEN PUT THEM IN A PLASTIC BAG THEY WILL STAY SOFT LONGER.I'VE HAD CHOCOLATE CHIP COOKIES STAY SOFT FOR 2 WEEKS.
