Potato Chicken Delight

I 1/2 C. Chicken chopped
1 can cream of chicken soup
1/2 C sour cream
1 1/2 c of cheese shredded(reserve some for top)
1/4 C Milk
1 sm. can of onion rings(reserve some for top)
3 C frozen hash browns(defrosted)
1 C crushed sour cream and onion chips

In a bowl mix first six ingredents reserving. Grease a 1 1/2 Qt casserole layer 1/3 of meat mixture and half of potatoes, repeat layers ending with meat mixture. Top with chips remaining cheese and onions. Bake at 350 for 40 mins. or until hot and bubbly.

Chicken Kebabs.
4 Chicken Breasts.
2T Soy Sauce.
2T Dry White Wine.
1 Clove Garlic Crushed.
1t Fresh Grated Ginger.
Chop chicken into 2cm (¾”) cubes. Mix in a bowl with soy, wine garlic and ginger and marinade for 1-2 hours.
Prepare vegetables for kebabs. Mushrooms, tomatoes, peppers (bell), onions, pineapple, baby corn.
Thread onto skewers and cook on the grill.

I like to make a macaroni salad out of it.
Ingredients: 1 pkg. ring pasta prepared as pkg. directions states, 4 oz. cubed sharp cheddar cheese or whatever kind you like in the brick form, 1/4 cup finely chopped onion,1/2 cup finely chopped celery, 1 - 1 1/2 cups cut up chicken, 1 cup frozen peas, for the dressing 3/4 cup mayo or miracle whip, pepper and salt to taste, a little vinegar or lemon juice, a teaspoon or so mustard if desired. Mix the onion, celery, mayo, salt, pepper, sugar, mustard and chicken together,and fold in the rest of the ingredients till mixed.

Cajun Chicken Pasta
INGREDIENTS:

* 3/4 pound rotini, cooked according to pkg
* 2 tablespoons butter
* 2 skinless boneless chicken breast halves, sliced 1/2" thick
* 3 cloves garlic, minced
* 1 bunch green onion, chopped
* 2 tablespoons Cajun seasoning, or to taste
* 1 teaspoon freshly ground black pepper
* 1 teaspoon ground red pepper (cayenne)
* 8 ounces heavy cream
* 1 green bell pepper, julienned
* 1 red bell pepper, julienned
* 8 ounces fresh mushrooms, quartered
* 1/2 cup parmesan cheese, grated

PREPARATION:
Cook rotini (or similar pasta) according to package directions. Drain; set aside. Melt butter in a large skillet over medium heat. Add chicken; cook, stirring frequently, until browned, about 6 to 8 minutes.
Add garlic, onions, Cajun or Creole seasoning and ground black and red peppers. Add bell peppers and mushrooms; stir to combine. Cover and cook for 5 minutes. Uncover; stir in cream and let simmer another 2 minutes. Stir in parmesan cheese. Remove sauce from heat, stir in cooked pasta and serve immediately.

Shred, toss w/ salsa, heat up in pan or microwave, and wrap up in a tortilla

Make chicken salad, either for spreading in sammies or an entree-type you eat w/ a fork

Make soup w/ chicken stock, cheese tortellini, and throw in a hadnful of baby spincah at the end, garnishign w/ Parmesan chz/

Chicken "pot-pie": Roast up some veggies (I often just roast a bag of diced veggies in the oven); add chicken; and cream sauce (can used cream of canned soup or just thicken a seasoned milk sauce with a roux of flour and water); top with refrigerated biscuits or philo dough sections.

Cut or shred it up add BBQ sauce and have a sandwich.

Heat it up and serve with prepared white rice mixed with a can of Cream of Chicken soup

Cut it up or shred it heat it up mix it with some al dente pasta and a jar of Al Fredo sauce. Add in broccoli and mushrooms if you like.

Chicken salad sandwiches

Cut up some celery some people use relish instead, but i hate it.
add mayo till its creamy enough
throw in a dash of pepper.

Mix the chicken with mayo and spread on a piece of bread, that's what I do.
