I need a kinda large capacitor like 1/2 Farad and 9-12 volts, but I can't get it. What else could I use that would mimic a capacitor thats has fairly quick discharge. (Its nothing really technical, its not going to go into any electronics)

You can get large value capacitors several places. Ebay is one. Just do a search for 1.5 farad capacitors or follow the link below.

Caps like this are available from high end car stereo places. They are used to supply instantaneous current for very high power(like 1000W) car stereo systems. They are rated at ~15V(you can use them at anything below this) and 0.5 to 2.0 farads. They are expensive 50-$200 each. Parts Express in Dayton Ohio, is one outfit that I know sells them. They have a website.
You need to quantify very quick. If you need to discharge in like 1 second or less, nothing can to that except a capacitor. A lead-acid battery(car battery) can give you a lot of juice for like 30 seconds(100-200amps) but doesn't charge very quickly.
Without knowing more about the particular application I couldn't suggest a good substitute.

Car stereo, they have large value caps called 'stiffening caps' that are used to provide surge current in car audio.
