I've studied dream interpretation for 7 years now. I'm not a professional, but I would say I'm pretty much an expert. Here's my advice to your for interpreting not just this dream, but all dreams. Sorry if it turns out kinda long.

What you have to pay attention to are the symbols that present themselves to you in the dream. In this instance, it's a roller coaster. I often interpret dreams for friends and find that when you are asking for an interpretation, you often describe what the dream means yourself just by asking a question about it and putting it into words. For example, look at you're question...there had to be other elements in your dream than just being on a roller coaster, for example the sky around you, what the roller coaster was made of, if people were around you or not, etc. But what you chose to mention in your question was RIDING a roller coaster. We often pick out certain details in our dreams because they're the most important symbols to help you interpret them.
What does riding a roller coaster mean to you in waking life? Do you like it? How did you feel in the dream while you were riding the roller coaster? Scared, excited? Back and forth between the two? Riding a roller coaster means you're going up and down, back and forth, sideways and upside down. Obviously, you're subconscious mind is trying to tell you that this sort of uncertaintiy and mood or energy elevation is going on in your waking life, and you'd do best to pay attention to it; stop ignoring it. That's why you keep having this dream. Recurring dreams won't stop until you solve the problem that's associated with it.
Address anything in your life that's causing you to be on an emotional rollercoaster. Or a financial roller coaster. Or an energy roller coaster, etc. YOU are the only one who can figure out what your subconsious mind is trying to tell your conscious mind. Dreams don't come out of nowhere, they're created by our own minds. They're often just as important as our waking thoughts. Sometimes more important, because they can alert us to something we might be unaware of. They can signal when something is a bigger problem than you think it is when you're awake.
Like I said, look for symbols, and think of what those ideas and items mean to you in real life. Colors that stick out, a line of conversation that repeats itself to you, etc. Those are the things that will help you the most.

If all else fails, get some ideas about dream symbols from a dream symbol book. I recommend it as a last option because you know what something means to you more than some book. But at the very least, reading a book like that can give you insight into how to create symbols of your own.
