Granny Smiths for two reasons. 1 I just prefer a tart crisp apple for eating. 2 They are excellent for baking. They hold up to the heat of the oven without turning to mush like some varieties. Also, some apples begin to turn brown as soon as they are peeled and cut, which Granny Smiths do not. They give you a little more working time in the preparation of pastries.
