There are so many! It just depends on what you're looking for, what you have on hand, and if you don't have it-are you willing to make a grocery trip?

If you have a grill, I'd say its summertime and put it to use!

Some chicken breasts brushed with bbq sauce & some pre-shucked corn on the cob can be thrown on the grill and done in minutes. Add a salad, or even better, quick baked potatoes in the microwave. You're microwave probably has a potato button (most do these days). Just take a fork and poke over the potatoes to add venting, spray with non-stick cooking spray, put them on a paper plate and hit that button. You can have a great meal in about 30 minutes, and never have to heat the stove or oven :)

No grill? No problem. You can still use the baked potato idea. How about "loaded" baked potatoes and a salad? If your extra carnivorous--throw together a meatloaf. Mix up the following:

1 lb. ground beef (thawed)
1 medium onion, chopped
A palmfull of breadcrumbs
1 egg
Salt & Pepper

If its too "wet" add more breadcrumbs, too dry, add another egg. Pop it in the oven at 350 for half an hour and voila...dinner's done.

Sloppy Joes, potato or mac salad, and green beans or corn on the cob.

I've been making my sloppy joes with ground turkey. Half the price of beef right now and just as good. When ground turkey is cooked with the seasonings and sauce, you really can't tell the difference from beef. Works for tacos too.

I mix turkey and beef half and half for meatloaf.

Pork chops on the grill brushed with some A1 is good.

Last night I made a turkey breast in the crock pot, heated up canned sweet potatoes with a little butter and brown sugar, opened a can of cranberry jelly, instant mashed potatoes, gravy and green beans. YUM. Easy and they loved it. Turkey breast fixed in crock pot with a little butter (or a lot) is the most tender delicious turkey ever. Turkey isn't just for the holidays, it is less expensive than beef, and better for you.

Root Beer floats as a special treat for dessert later in the evening (low fat ice cream and diet root beer).

Cook some rice...I prefer brown rice, but whatever your family chooses is fine. In another pan, add a little oil and chop up some onions, peppers...what ever color looks good) and cook. Now you can add whatever you want to that..fresh or frozen veggies, any left over meat, or chicken, and add some teryaki sauce or sweet and sour and you have a quick easy stirfry...serve over your rice.

Tonight I'm using leftover BBQ chicken to make chicken quesadillas.
Tomorrow I'll use leftover beef to make a beef & veggie stirfry.
If you don't have leftovers to use, why not grill something? Just use some salad dressing to marinate the meat, then pop it on the grill along with some veggies and maybe potatoes if you want.

This is one easy peach cobbler that can be made with a store-bought crust and canned peaches.
