I LIKE YOU! Any gal that wants to count vodka in her daily diet intake is My kind of Girl!
Tell ya what ya do:
Knock back five (5) screwdrivers, that's vodka and orange juice, and 1. It won't matter if it's made from grain or potatos.
2. You will easily have your daily fruit intake.
The best of both worlds!

Lets go back to alcohol basics 101. Alcohol = Ethanol. And how you get Ethanol is by fermenting sugar. So to answer your question, basically in theory every vegetation or plant that has sugar in it especially the seed where it contains starch for growth will be able to produce alcohol.
Hence vodka which is usually alcohol that is not aged, can be produce from any vegetation under the sun. The problem is, not all vodka producers would name their source from which it is made as some of the ingredients used are really dirt cheap. Only the luxury or super premium vodkas would specify what their vodka is made from. An example of a good potatoe vodka would be Chopin produced in Poland. The same company also produces Belvedere Vodka made from 100% Dankowskie Golden Rye.
To answer your last question, no it doesnt count as your daily fibre intake as only the sugar content is used to produce the vodka.

Strictly speaking Vodka is only made from grain. Grain from Eastern Europe. If the French had there way they would accept it made from grapes but they would moan like hell if you made a sparkling wine in the UK, or anywhere come to that, and called it Champagne!!
For your five a day may I suggest you add a splash of freshly squeezed orange to your Vodka or steep any fruit in vodka and sugar to enjoy as a Liqueur. Whatever you do - enjoy.

Vodka can be made out of just about anything that has sugar in it for yeast to metabalize. A lot of the Polish Vodkas are made of potato's. A good rule to go by is what crop is common around were the vodka is made, that is what it is probably made of. And no, it dosn't count to a fruit or veggie, unless you drink Martini's and eat your olive.

There are different types of vodka. Some is made from grain, some potato, and one brand is made from grapes.
I count it as both fruit and vegetable, just to be sure. If you want to be doubly sure, add a couple of olives to the vodka and count those as an additional serving.

Vodka is one of the world's most consumed distilled beverages. It is typically a colorless liquid containing ethanol purified by distillation from a fermented substance such as grain or molasses. If you can go to wikipedia.org and read all about it...no where does it say it was ever made with potatoes......
