Drain tofu, place between two towels with a weight on top so that it can drain some. Use the microwave to thaw some frozen veggies of your choice. Use as much as you want. After it's thawed, set aside. Get a skillet, add oil (if it's nonstick you can use less oil). Let the oil become hot on medium heat. While waiting for the pan to heat up, cut tofu into 1 cm size squares. Use any amount you want, and if there is some left over, put it in the container with fresh water. Make sure the top surface is wet. Place tofu & veggies into hot pan and saute. Season with salt and any other kind of flavoring you want. You can even add some soy sauce for flavor and/or color. If you don't like soy sauce, skip it. Use parsley, oregano, chile, curry, cumin, sage, marjoram, whatever it is that you like. Cook for five minutes or until it's as browned as you like it, remove from heat. Serve with bread, potato, leftover rice, tortilla, whatever, and you've got yourself a meal. Mmm!

my fav is an Indian snack...called Puda or Chilla
Ingredients:
Semolina (Rava/Sooji) – 1 cup
Chickpea Flour (Besan) – ½ cup
Salt – to taste
Turmeric (Haldi) – ½ tsp
Onions – 1 small, finely chopped
Cilantro – 5-6 sprigs, finely chopped
Green Chili – 1 or to taste, finely chopped (optional)
Water – 2 cups, warm
Oil – to cook
Method:
Add Water to the Semolina, Chickpea Flour, Salt, and Turmeric.
Mix until all lumps are gone and let it soak for about ½ hour.
Add the Onions, Cilantro and Green Chilis and mix again.
Heat a flat Griddle (preferably non-stick) on Medium to High heat.
Drizzle a few drops of oil on the griddle.
With a flat-bottomed ladle (karchi), take some of the mixture and pour it onto the griddle. With the bottom of the ladle spread the mixture out in a circular motion. For appetizers, 3” to 4” rounds are easy to pick up and eat.
Let it cook for a few minutes, drizzle a few drops of oil on top and flip them over. Cook for another couple of minutes.
Serve hot with chutney or ketchup.
Makes approximately 20, 4” pudas.
Tips:
If you are not making pudas for appetizers, make them bigger (6” to 7”).
If you are going to make it ahead of time for a party, heat in the oven on broil just for a couple of minutes.
To make it healthier, use a spray cooking oil (Pam).

spread about a tbsp of vegan butter over a tortilla..then sprinkle it with cinnamon and sugar. Roll it up with the ends folded in. Heat up a pan with a tiny bit of oil and puff it up by pan frying it. =)

I created this one I was about 11 years old. I still love it even though everyone makes fun of me for it.
Vegetarian Shepherd's Pie.
Take one can of corn or peas and mix with mashed potatoes.
Thats it. It started when I was making shepherd's pie and the meat had gone bad, so I just made do.

I love alfalfa sandwiches. I use either wheat pita or a wheat tortilla. I spread it with garlic hummus first, then I add onions, tomatoes, lettuce, veggie cheese and I add TONS of alfalfa sprouts. It's crunchy and good!

Seaweed wraps with rice and vegan chili.
