I am almost a vegetarian, and I live in Mexico, I buy a different type of dried bean each week. I pick them of debrit and wash them, then soak in purifide water over night. Next day cook them in fresh water or chicken broth, with pressed fresh garlic, onions, green peppers, red and yellow peppers, and tomatotoes, and some puried tomatoes, and cook slowly with a lid on for 4 hours. & stir every half hour or so, don't let it stick to the bottom of then pan. Add a little salt and pepper and some Mx.seasoning.
I make toast whole wheat bread and spoon two or three large spoonfuls of beans and sauce over the toast, and have it for breakfast or supper, or whenever.
Dried beans, lentils, peas are 2nd class PROTEIN. They are easier to digest than filet mignon. They are cheap and very nourishing. Garlic and onions are extremely healthy too. I often use the above recipe as a background for my vegetable soups too. They are so flexible. Much healthier than beef.

Since you are dieting you should look into their Hi-Maize as well. You replace 25% for the flour in recipes with it and it adds 15grams of fiber per 1/4 cup of Hi-Maize without changing the flavor.
Make sure your diet is getting you atleast 35grams of fiber a day. When you get 35grams of fiber it keep your body from absorbing up to 20% of the calories you intake.

um...
eat fried tofu or mock meat (not real meat, tofu meat) like tofurkey, mock duck, mock chicken, etc.
beans, veggie burgers...
and about any soy product there is
remember, the lack of iron from being a vegetarian. a large amount is in meat, but very little is in tofu, leafy veggies, and beans.
take iron supplements.
iron is important for blood hemoglobin to capture more oxygen for the human bodie's need. otherwise, you'll get iron deficiency

They sell this ground tofu product that looks just like beef when it is cooked and tastes similar too. It is in the frozen section of the grocery store.

I understand Tofu is the best substitution. It is easily cooked into whatever you want it to be, you just can't eat it plain as it is NASTY that way. Good luck!!!

tofu oviously, cut it up in small pieces fry it up in a pan and add it to any meal or u can buy tofu with herbs and put them in ur salad raw without cookin it, so that way u have ur salad and protein (low in fat) at the same time ;)
