You didn't mention how old your son is, but I'll guess that he's under 18 and still lives at home! Here are some ideas:
1. Chicken tenders (homemade using boneless, skinless chicken breasts, cut into thirds, seasoned with salt, pepper, garlic powder and dipped into egg then rolled into Panko bread crumbs. Drizzle with olive oil. Place in oven (400 degrees) and bake until golden brown, turning once, and juices run clear. Serve with ranch dressing and homemade french fries. Add some fresh fruit and a salad to round it out.
2. Homemade pizza using a premade crust (Boboli) and sauce. Top with all your favorites such as cooked sausage, pepperoni, artichoke hearts, sliced onion, salami, etc. and a mixture of fontina cheese, goat cheese, and Italian blend shredded cheese. Serve with a great green salad and have chocolate sundae's for dessert.
3. Spaghetti with meatballs (call your favorite Italian restaurant for take out, or use your own special recipe), green salad, french bread with Italian herbs and cheese. For dessert consider Italian ice or tiramisu.
4. Porkchops baked with mushroom soup. Serve with mashed potatos and fresh green beans. For dessert have a chocolate cream pie.
5. Roasted stuffed chicken or game hens. Stuff with your favorite bread or rice stuffing mix. Serve with sweet potatos and peas. For dessert, apple crisp with ice cream.

Ask your Son what his favorite meal is, get creative, and you both prepare it. Take advantage of the time that you have with him. Not only will he remember it but you will as well.

i might bypass with a paste dish or lasagna. all human beings likes pasta, that is straight forward and yummy. additionally, that is straight forward to make a extensive volume of it. good if off with delicate, domicile made bread, and salad. good success and congrats!

Kraft macaroni and cheese! If you want to try to make it healthy, you can dice up some bell peppers and ham, and mix it all together.
