I don't. I harvest them when they are ready to eat. Whether I eat it or not, it will finish it's life cycle at the end of the growing season anyway. Besides, tomatoes, cukes and tons off other veggies aren't killed when harvested. The fruit is taken...which will rot anyway if not eaten.

Who says that plant's do or don't have souls? I did not realise that you were the almighty creator of everything.
As for killing of any organisim, it is the way of existience.
Entities here take in matter and convert the matter to energy, what is not used is expelled and reused/ assimilated by other organisims.
I don't see the death of an organisim, simple or complex, as death but rather and endless cycle of recyling matter.
