What would you say is your favorite tasting caribbean food? And why?

I'm trying to come up with a Caribbean Menu for an upcoming restaurant.
All and any of the help is appreciated.

You have to love the flavors in the caribbean. So different than other parts of the world.

Salt fish with spinach and rice. Don't forget Dhal with that.
Curry chicken with roti. If you like it hot add some pepper sauce.
Jerk chicken or pork. Pelau, red beans and rice.
Doubles, aloo pie.

sweet bread, coconut drops

sorrel - if you have never had this drink, you must. I am sure everyone would love it.

conch.

these foods have so much flavor, different than what I grew up with in the USA. Not all the food is (hot), you will get used to it, although it takes time.

My favorite Caribbean Food, will be off course something from Trinidad , But then again I love them all, so here goes.
Curry Chicken and Roti with chickpeas and potatoes
Coo-Coo with Stew Fish and Callaloo, that's to die for.
Rice Pelau off course.
Oxtails with Rice and Peas
Steamed fish with Breadfruit Oil down with coconut milk.
I'm getting hungry just writing this.
The reason being that they all taste good and I'm used to it. I grew up eating all that good food.

Jerk Chicken, oxtail, yams, beat juice, greens, red rice and beans.
One of my closest is friends is Jamaican and that was what was made for a family meal one night, I was invited. I didn't eat the oxtail, but I had everything else, the jerked chicken can be very spicy, but if you eat it with Blue Cheese salad dressing it gives it a sweet taste. There is something about blue cheese & jerk that makes it sweet, Ranch dressing won't do it, just blue cheese.

Tostones- Thats a puerto rican delicacy---a double friend smashed plantain fried then topped with a sauce made from olive oil, raw garlic, and salt made in a pilon (i think in english it's called a morter and pestle)

ackee and saltfish with roast breadfruit
Rice and peas and chicken
curry goat and white rice
curry chicken with yellow yam,dasheen and flour dumplins (cornmeal can be used as substitute)
fried breadfruit and red herring or saltfish, fried chicken and mashed potatoes with boil corn, jerk pork, and festival jerk chicken, baked chicken steam fish and crackers , stew beef, brown stew chicken , escoveitch fish with festival crab , curry lobster and white rice, boil green bananas, callaloo rice pumpkin rce just to name few foods

beverages- coffee,mint tea, orange juice, friut punch , mango/passion ( an be seperate or both), soursop with lime ,apple. pineaple ginger, guavapineapple, mangocarrot, lemonade to name a few

Soups- goathead , pumpkin, beef,chicken, pea( with cornpork,pigstail),vegetable etc
dessert- rumcake, potatoe pudding, fruit cake etc

Lobster!!! Caribbean Lobster is one of the best I've ever had.

I ate filled crabs topped with breadcrumbs and baked in the oven in Guadeloupe. Just great!
