I am disapointed with my mexican brothers and sisters being hired to cook food thats unique to other cultures..this is not intended to be an attack on other races...but should we patronize businesses that advertise "chinese"..."soul" or "italian" and its actually mexican chefs?

I honestly am not attacking the chefs..I am quetioning the authenticity of the food prepared..I love mexicans..cant wait till they get california and texas back!! viva mexico..!!

Yes, it is a bit disappointing when you expect to see the people of that race to serve that authentic food. I had such an experience a while back when I went to a Danish restaurant and saw only orientals as chefs and waiters. I however did stay and was pretty pleased at the food that was served, they were very good.

Look, I don't get it.
I'm Mexican. My grand dad is chinese. I grew up in a chinese food restaurante enviroment and also, we served mexican food.

I belive in evolution. The only way this humanity can grow is by "mingle"
forget about races and move over. even the most refined chinese food come from a mixed bunch of cultures and races.
Italian food became from greek, chinese and other mediterranean cultures.

open your mind "brother" and you'll see how beautiful is to be part of this humanity and not only one breed.

or you'll miss a few GREAT chinese-mexican recipes i know.

and BTW... we mexicans ROCKS cooking, so may be that's why we are not just the best in kitchens all over the world, but also, we are hard working, fast, and mentioned as some of the happiest people in earth.

if the owners of this restaurants need to say "authentic chinese, italian, soul..." on its ads, is because of people who need instructions for eating.

We know food baby!

Authentic cuisine means that the recipe follows a traditional method or style of cooking that is native to its roots.

If a Greek chef from Canada studied how to create authentic Italian dishes under a chef like Mario Batali in New York, does that mean that it is not authentic Italian because he is Greek?

If he learned the dish from a master chef, and it tastes the same as if you were in Italy, then you can call it "authentic" cuisine.

If you feel it is a lie, you can start your own restaurant and prepare a "Mexican-Chinese" fusion menu, or put a note on your menus that indicate the nationality of your kitchen staff if you feel it is relevant to your customers.

This is an attack on races. The quality of food has nothing to do with the person cooking it. That is why there are cooking schools and training. There are French Chefs cooking Mexican food, Italian Chefs cooking French food, Chinese chefs cooking other foods other than chinese.

A restaurant is not advertising the people cooking there food but what type of food they are selling. Duh!

Well,anyone can learn to cook other cultural foods,but it does look very weird to go for Chinese & get a Mexican chef!
This old white & indian woman makes a mean mexican dish of any kind,but when you have a business going,i believe you should keep up appearances as well.You make more business this way & earn more money.

It doesn't matter which race is cooking it, but the food that gets cooked. Maybe your brother has the talent for cooking those "authentic" foods.Just because he's a different race and the foods from another, doesn't mean he can't cook it."Authentic chinese food" doesn't mean that there has to be an "authentic chinese chef" cooking it.If he's good, then he should continue cooking.

this is sooo not true...i mean all chinese food restaurants hire chinese chefs i mean if u are mexican obviously u duno how to cook chinese food use ur brain dude i mean if it was mexican cooking italian tahts different since the foods are very similar its easy to learn but i know that all chinese foods are prepared by chinse ppl not MEXICANS

I could care less as long as the food is good I have seen chinese ppl cooking in the mexican restaurant here.

Oh man and I'm German and I cooked in an Italian restaurant. Even worse I helped part time in a Mexican restaurant. I'm so ashamed of myself now. Oh woe is me.

Authenticity comes from ingredients, recipes, and method of preparation. It has nothing to do with the guy with his hand on the spoon. If it's good to the palate, then why worry with something so unimportant?
