The only thing that will happen is you might get a little queasy after finding out that it was old cheese. Technically, lots of people eat old cheese (IE: Blue cheese, Parmesan, etc...). You might have been feeling the effect of something else, though. I'd suggest you get checked out just in case there's something else going on.

Cheese doesn't really have an expiration date. It sounds like you had a panic or anxiety attack possibly brought on by you worrying if the cheese was okay.

Even if the cheese was covered in mold, if you cut off the mold the cheese underneath should still be okay. Otherwise they wouldn't be able to sell 2 year old cheddar which is an absolutely fabulous cheese especially when paired with a big red wine like a Shiraz.

So don't worry about it. You're fine.

I've never heard of cheese expiring. Usually if it ever gets moldy you just cut the mold off as it's on the outside only. But it takes a long time for cheese to get moldy anyway.
I agree with the nurse, it does sound like you had a panic attack. Cheese is aged to taste better like a fine wine is.

I sniff everything before I eat it, if it looked/smelled ok, probably won't harm you.
