The summer months are great because you have a bounty of fresh fruits and veges to choose from. I recently gave a bridal shower and this was my menu: Grilled chicken breasts (boneless, skinless, marinated in Italian dressing overnight) Fresh rolls with butter Spinach salad (with strawberries, goat cheese, candied walnuts and crumbled bacon tossed with a french dressing) Pasta salad (with rotelle, cubed salami, feta cheese, red bell pepper, green onion, olives and Berensteins Cheese Fantastico dressing made the night before so the flavors can meld). Citrus punch ( 1 can lemonade concentrate, 1 can frozen Margarita mix concentrate, 1 can pineapple juice concentrate, 2 liters gingerale and 2 liters flavored sparkling water along with a lemon infused ice ring) Raspberry White Chocolate Cheesecake It was substantial enough to satisfy some hungry ladies and yet light enough to not totally blow out your diet.
