what can you eat that is tasty and healthy?

The only veggies I like arre potatoes, tomatoes, corn and lettuce but I'm not sure if their veggies.

Keep eating them. Veggies are an aquired taste for some people. The more you expose your tastebuds to them the better they will taste. Even if you do eat meat, it is still VERY important to eat vegetables.

A tomato is a fruit, btw. But there are so many more great veggies! And don't forget fruit! Veggies: Carrots, Cooked Carrots, Mashed Potatoes with some Garlic, Onions with some Mashed Potatoes and Feta Cheese, French Fries and Feta Cheese, Bean Soup, Bean Salad, Re-fried Beans on a tortilla (not so healthy, but if you're hungry... ;D) Fruits: Strawberries. Blueberries, Cherries, Cantaloupes, Honey Dews, Watermelons, Peaches, Nectarines (all of those are great for this season) and Oranges, Apples, Cucumbers, Zucchini, Grapes, and so many more things to make out of it, like Fruit Salad, a chocolate cake with a fruit topping, etc!! But these recipes are only good for vegetarians, vegans couldn't eat the cake, since it has milk and eggs :( And don't forget Broccoli and Cheese!!! And cheese fondue with bread, apples, carrots, etc.

To remain healthy, the human body needs building blocks only obtained from protein sources. You will want to eat a wide variety of fruits, nuts, vegetables and greens. Some believe that 40% of your daily diet should be leafy greens. They contain good balances of nutrition, and the proper building blocks for your body.
Avoid refined carbohydrates you find in pasta, bread, crackers etc. Try to avoid refined foods of any type; commercial packaged food has little to no nutritional value. Eat as many of the vegetables, Fruits, and Nuts in the raw form.
You need not go "Organic," admittedly, it is much healthier for you, but does cost more. Regular fruits and vegetables from the grocer, farmer's market, or your own garden are good.
Corn is not a vegetable. It is a grain. It is one of the better grains, but also investigate quinoa and millet are excellent grains, but somewhat bland.
Do not think that being a vegetarian means "I don't eat meat." It means that you've taken an approach to a healthier diet that does not derive it's primary protein from animal meat. Look for chick peas, or hummus. Very tasty treat. Learn to use spices. If you have access to a Indian or better yet a Tibetan restaurant or market, check it out. Spices can make the meal.
Your body also needs oils to stay healthy. Look for olive oil, and DO NOT eat any oils that have been hydrogenated. Soy is not as healthy in oil as you may think. The soy bean in its natural state is good, but when it is processed, any food loses its benefits. That is why so much of refined food has additives.
The first month will be difficult, but will become easier. Take it one day at a time. You will also want to go off of refined sugar, try honey, agave nectar or suconaut as replacements, if you must have sweets.

The good news is the foods you listed are indeed veggies. I would encourage you try different varieties of beans and grains because I find them to be healthy and tasty. You can change how you cook and prepare them and find interesting tastes.

I was one of those people who led a very restricted diet when I was young and though I ate meat I still was malnourished. When I started trying to change my diet I committed to eating 1 new veggie a week until I found ways I liked to prepare, cook and consume the new food. Now I eat a wide variety and couldn't be happier.

Oh and try purple potatoes, they are cool and taste great.

i didn't think I liked vegetables much either, but I plunged into a vegetarian lifestyle anyway and, believe it or not, I have grown to LOVE vegetables!

Here's some ideas on how to increase your vegetables intake without gagging...

Add stuff like finely chopped zucchini and cabbage to salads - you will hardly notice it's there. Also try a product called Rainbow Salad in your produce section- it's hearts of broccoli shredded with carrots and some other veggies - it's super good for you and has hardly any taste. Just throw a handful in with your salad. Sprouts are also a mild tasting good for you thing to add to salads. I add a lot of stuff to salads - Chinese peas, beans, chopped carrots, green onions - it's fun to go crazy! I add a handful of nuts to all my salads, too.

When you make stuff like spaghetti, chop up zucchini or eggplant and mushrooms and bell pepper to add to the sauce.

Fall in love with veggie sandwiches! Tomatoes, cucumber (sliced thin), chopped romaine lettuce, sprouts, onion, bell peppers...on a wheat roll...with mustard and veggie mayo...mmm!

Try soups that have a lot of veggies. I am not a big fan of cooked carrots and peas, but in soup, the reality is you can't taste them. They are just mushy things that taste like whatever the soup is. I wouldn't touch vegetables oup until recently and I was missing out all those years!

Add equal amounts peas andavocado in a food processor and puree. Then add lime, pepper, a pinch of salt, some chopped jalapenos if you're brave, chopped onion and tomato and viola - an extra healthy guacamole!

Get a juicer! Tomatoes, carrots, and celery with a bit of pepper...mmm! And if you hate it, you can always pinch your nose and chug it like my husband does!

Add shredded zucchini to shredded potatoes for hashbrowns.

Puree steamed caulifliower and mix in with mashed potatoes.

Okay, I'm about tapped for ideas, but here's one more:
Try baking butternut squash or yams and then pureeing them with a little brown sugar, vanilla extract, and margarine and bake with a little more brown sugar and some pecans on top. Yum!

Deciding to go vegetarian has been the best thing I've ever done. I feel so much healthier and happier. I hope you discover the same kind of joy!

Eat the veggies you do like every day. And eat plenty of veggie burgers, beans, and whole grains. Try preparing more veggies to see if you like them. Like, put mushrooms on pizza or dip carrots, pickles and olives in a yummy dip. Add some fruits too.

Peanut Butter is Good! Also, Crackers, Mac & Cheese, Any Kind of Bread, Cereal

A Plan for the day:
Breakfast: Cereal and if ya drink milk or Pancakes, Waffles, or a few muffins, Pop Tart

Snack: Salsa & Chips

Lunch: Peanut Butter Sandwich and Milk


Dinner: Macaroni Salad, Corn
Dessert: Cookies ARe always Good!!!!!!

Eat big lettuce salads with your favorite dressing and some nuts and raisins for one meal a day. Have a few handfuls of raw nuts like almonds or walnuts(you have to get the kind in bulk from the health foods store--the regular brands like diamond are usually rancid and taste awful plain and raw).

they're veggies, definitely. anyhow, there are a ton of soy products out there that taste similar, but definitely not identical, to meat and dairy products. however, some people are concerned about how healthy soy is because it is mass-produced as a result of so many people with lactose intolerance and so many people who are vegan. however there are a lot of organic soy products so that's not a problem.

Eat fruit and other protein like beans, legumes, eggs. And eat the veggies that you like. You should also try some that you have never tried you may be surprised that you like some of them.
